Time 1h10m

Yield 6

Number Of Ingredients 12

1 (2 1/2 pound) butternut squash - peeled, seeded, and cubed
3 tablespoons olive oil, divided
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil
sea salt and ground black pepper to taste
2 skinless, boneless chicken breasts, pounded flat
1 (16 ounce) package whole grain penne pasta
½ cup grated Parmigiano-Reggiano cheese
2 tablespoons olive oil

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Combine squash, 2 tablespoons olive oil, rosemary, sage, thyme, oregano, basil, sea salt, and pepper in a large bowl; toss until squash is coated with herbs. Transfer to a sheet pan.
  • Place in the preheated oven and cook until squash pieces turn golden brown on the bottom, 15 to 20 minutes. Remove from oven, flip with spatula, and cook until tender, 15 to 20 more minutes.
  • While squash is cooking, preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Brush chicken with remaining 1 tablespoon olive oil and season with sea salt and pepper.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove to a plate and cut into thin slices.
  • While chicken is cooking, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta and transfer to a large bowl. Top with roasted butternut squash and all oil and herbs from the sheet pan. Add chicken slices and sprinkle with Parmigiano-Reggiano cheese. Drizzle with remaining 2 tablespoons olive oil if pasta seems dry.

GRILLED BUTTERNUT SQUASH WITH SAGE

Grilled Butternut Squash with Sage image

This is the best way to have this squash. If you slice it thin and small, it is like chips and smells great. Thicker slices are good for topping with other things at a meal. The grilled squash can also be cut and added to soups for a nice smoked favor.

GRILLED BUTTERNUT SQUASH

GRILLED BUTTERNUT SQUASH image

Categories     Vegetable     Side     Quick & Easy

Yield 4 servings

Number Of Ingredients 4

1 medium butternut squash, peeled, seeded and cut into 1-inch pieces
3 tablespoons extra virgin lemon olive oil
1 tablespoon flavored vinegar (I used honey ginger)
salt and pepper

Steps:

  • Place squash in microwave-save vegetable steamer. Steam for three minutes. Let cool. Toss the squash with remaining ingredients. Thread the squash onto skewers and set aside. Build a medium-hot charcoal fire or heat a gas grill to medium high and oil the grill grate. Grill the squash skewers, basting with the reserved marinade, until browned and tender, 5 to 7 min.

Tips:

  • Choose the right butternut squash: Look for a squash that is firm and has a deep orange color. Avoid any squash that has soft spots or blemishes.
  • Cut the squash in half lengthwise: This will make it easier to grill. You can also peel the squash before grilling, but this is not necessary.
  • Brush the squash with olive oil: This will help to prevent it from sticking to the grill.
  • Season the squash with salt and pepper: You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Grill the squash over medium heat for 15-20 minutes per side: The squash should be tender when pierced with a fork.
  • Let the squash cool slightly before serving: This will make it easier to handle.

Conclusion:

Grilled butternut squash is a delicious and versatile side dish that can be enjoyed any time of year. It is a good source of vitamins A and C, and it is also low in calories and fat. Grilled butternut squash can be served with grilled meats, fish, or poultry. It can also be added to salads, soups, and stews. With its sweet and slightly nutty flavor, grilled butternut squash is a surefire hit with everyone who tries it.
