Yield 4 serving(s)

Number Of Ingredients 10

4 boneless skinless chicken breasts, thawed
1 pinch salt
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
8 slices fresh mozzarella cheese
4 roma tomatoes, seeded and diced
8 fresh basil leaves, stacked, rolled and thinly sliced into chiffonade
3 fresh garlic cloves, minced
1 pinch salt
1 tablespoon balsamic vinegar

Steps:

  • Preheat a grill pan over medium heat on the stove top. Spray with cooking spray. Combine balsamic and olive oil in a bowl. Season both sides of chicken with pinches of salt and place on grill. Brush top sides of chicken with balsamic mixture. Cook for 4-5 minutes and flip chicken. Brush with additional balsamic and cook for an additional 4-5 minutes or until cooked through. During the last 2 minutes of grilling place 2 slices of cheese over top each chicken to melt.
  • In a large bowl combine the tomatoes, basil garlic, salt and balsamic. Toss gently to combine. Place chicken breasts on a serving plate and top with tomato mixture. Serve warm.

Tips:

  • Use ripe, flavorful tomatoes. This will ensure that your bruschetta is packed with flavor.
  • Chop the tomatoes into small pieces. This will help them to cook evenly and prevent them from falling off the chicken skewers.
  • Season the chicken with a flavorful marinade. This will help to add flavor and moisture to the chicken.
  • Cook the chicken over medium heat. This will help to prevent the chicken from drying out.
  • Baste the chicken with the marinade while it is cooking. This will help to keep the chicken moist and flavorful.
  • Serve the chicken immediately with the bruschetta topping. This will ensure that the chicken is hot and juicy.

Conclusion:

Grilled bruschetta chicken is a quick and easy weeknight meal that is packed with flavor. The chicken is marinated in a flavorful mixture of olive oil, garlic, herbs, and spices, then grilled to perfection. The bruschetta topping is made with fresh tomatoes, basil, and olive oil, and it adds a bright and refreshing flavor to the chicken. This dish is sure to please everyone at the table.
