GRILLED PEAR & BRIE SANDWICH

Steps:
- Set pan on stove and turn stove to medium-low heat. Generously butter two slices of bread and place in pan. Place thin slices on each slice of bread, covering entire slice. On ONE of the brie topped slices, LIGHTLY pepper brie. Sprinkle thyme onto brie. On top of the pepper & brie, place pears slices, covering entire slice of bread. LIGHTLY sprinkle salt onto pears. Flip brie only slice of bread on top of pear slice of bread. Grill, flipping every minute or two until bread is golden brown on both sides and brie is melted. Remove and slice in half and devour!

- 1. Assemble sandwich by placing slices of brie followed by slices of pear on bread. Drizzle 1 tsp. of pomegranate molasses on top of the pear slices per sandwich; season with freshly ground black pepper. Place a couple of slices of ham on before adding a couple leaves of lettuce.
- 2. Generously spread mustard on the other bread slices and place face down on the lettuce. Spread butter on one side only.
- 3. In a panini press or skillet over medium heat, place sandwiches butter side down and put press on top, pressing down gently. If not using a panini press, place a heavy lid on top.
- 4. Grill for 2 minutes or until nicely brown. Remove press or lid and butter top slices before carefully flipping them over. Replace press or lid, gently press down again and grill for 2 minutes or until nicely browned. Serve immediately. Makes 3 sandwiches

I had this at The Davenport Cash store, which is north of Santa Cruz, CA. While everyone's dish was good, they all wanted bites of mine! Luckily it was easy to duplicate at home. I've used other breads, but I think a quality white sandwich bread best lets the flavor shine through. I've also baked several (at about 400 degrees, til golden browned) and then cut into quarters for appetizers at a brunch.
