GRILLED CHEESY GARLIC BREAD
This takes only minutes to make and is perfect to throw on the grill just before serving dinner. I like to make this with different cheeses, such as Parmesan or Gruyere, or whatever I happen to have on hand. Keep an eye on it constantly, as it tends to burn easily!

Steps:
- Cut each goat cheese round in half, down the middle, like separating an oreo cookie.
- Put in a glass dish and drizzle with olive oil, and salt and pepper to taste.
- Cover and marinate overnight.
- The next day, preheat oven to 400F and in a food-processor, blend white bread with italian herbs to make the bread crumbs.
- Roll the goat cheese halves in the bread crumbs and place on a baking dish and bake for ten minutes or until the bread crust is golden brown and the cheese soft and oozing.
- Serve with baguettes.
Tips:
- For a smoky flavor, grill the bread slices over medium heat for 2-3 minutes per side.
- If you don't have a grill, you can toast the bread slices in a toaster or oven.
- Use fresh, crisp celery hearts for the best flavor.
- Feel free to experiment with different types of cheese. A soft, creamy cheese like brie or camembert would also be delicious.
- Serve the grilled bread immediately, while the cheese is still melted and gooey.
Conclusion:
This grilled bread with celery heart and goat cheese is a quick and easy appetizer or snack. It's perfect for a party or potluck, and it's also a great way to use up leftover bread.
