TERIYAKI BEEF AND SHRIMP KABOBS

This is a favorite summer meal at our house.

FOR THE MARINADE
1 c low sodium soy sauce
1 c pineapple juice
3/4 c sugar
1/4 c worcestershire sauce
3 Tbsp vinegar
3 Tbsp sesame oil
1/3 c dried onion flakes
2 tsp garlic powder
1 tsp grated fresh ginger
FOR THE KABOBS
1 lb steak
1 lb large raw shrimp
1 lb small cremini mushrooms
1 large green bell pepper
1 large red bell pepper
1 large `yellow bell pepper
2 medium onions, cut in quarters
1 pt cherry tomatoes
6 skewers, if using wood skewers soak them for 30 minutes

Steps:

  • 1. Cut the steak into 1 inch cubes. Peel and devein the shrimp. Cut the peppers into 1 inch pieces.
  • 2. In a bowl mix all marinade ingredients until well blended.
  • 3. Split the marinade evenly between 2 large resealable bags.
  • 4. Add the shrimp and steak to one bag and the vegetables to the other.Seal the bags.
  • 5. Turn the bag to coat and refrigerate for 4 to 6 hours, turning occasionally.
  • 6. Preheat the grill to medium high. Drain the marinade and discard.
  • 7. On metal or soaked wood skewers, thread the steak, shrimp, mushrooms, onion, tomatoes and peppers alternately.
  • 8. Place the skewers on the grate of the grill and cook turning ever 4 minutes until steak is cooked to desired doneness.

1 cup teriyaki sauce
1 can (6 ounces) pineapple juice
1/2 cup packed brown sugar
6 garlic cloves, minced
1/4 teaspoon Worcestershire sauce
1/8 teaspoon pepper
1 pound beef top sirloin steak, cut into 1-inch cubes
1 pound uncooked large shrimp, peeled and deveined
1 pound whole fresh mushrooms
2 large green peppers, cut into 1-inch pieces
2 medium onions, halved and quartered
1 pint cherry tomatoes
1-1/2 teaspoons cornstarch

Steps:

  • In a large bowl, combine the first six ingredients. Pour half of the marinade into a large resealable plastic bag; add beef. Seal bag and turn to coat; refrigerate for 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain and discard. On metal or soaked wooden skewers, alternately thread the beef, shrimp, mushrooms, green peppers, onions and tomatoes; set aside. In a small saucepan, combine cornstarch and reserved marinade until smooth. Bring to a boil; cook and stir for 1-2 minutes or until sauce is thickened., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare grill for indirect heat, using a drip pan. Place kabobs over drip pan and grill, covered, over indirect medium heat for 6 minutes, turning once. Baste with sauce. Continue turning and basting for 8-10 minutes or until shrimp turn pink and beef reaches desired doneness.

2 sticks unsalted butter, at room temperature
5 scallions, pale green and white parts only, finely chopped
3 cloves garlic, minced
3 tablespoons soy sauce
1/3 cup extra-virgin olive oil
4 cloves garlic, minced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 ounces (about 12) medium-size button or cremini mushrooms, halved
1 pound (about 28) large shrimp, peeled and deveined
1 pound sirloin steak, about 3/4-inch thick, cut into 28 (1-inch) pieces
20 (6 to 8-inch) wooden skewers, soaked in water for 30 minutes to prevent scorching

Steps:

  • For the butter: In a food processor, combine the butter, scallions, garlic, and soy sauce. Pulse until smooth. Place the mixture on a piece of plastic wrap and form into a log about 1-inch in diameter and 7 inches long. Roll the log in the plastic wrap and refrigerate until firm enough to slice, about 30 minutes. Slice into 1/4-inch pieces.
  • For the skewers: In a small bowl, mix together the olive oil, garlic, salt, and pepper. Thread 4 pieces of mushroom onto 6 of the skewers. Thread 4 shrimp onto 7 of the skewers. Thread 4 pieces of the steak onto the remaining 7 skewers. Arrange the skewers in a single layer on 2 baking sheets. Spoon the oil mixture over the top and marinate for 15 minutes.
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Grill the beef skewers for 3 minutes each side for medium-well. Let the meat rest for 5 minutes. Grill the shrimp skewers for 2 minutes each side until opaque and cooked through. Grill the mushroom skewers for 4 minutes each side until tender. Arrange the skewers on a platter and serve with the sliced butter.

4 tablespoons unsalted butter
3 cloves garlic, minced
1 1/2 tablespoons soy sauce
36 cremini mushrooms with 2-inch caps, tough stem ends trimmed (about 1 1/2 pounds)
2 teaspoons fresh thyme leaves, chopped
Kosher salt

Steps:

  • Preheat a charcoal or gas grill to medium high. Swirl the butter in a small saucepan over medium heat until melted. Add the garlic and soften about 2 minutes. Stir in the soy sauce.
  • Put the mushrooms in a medium bowl, add the soy-garlic butter and toss until well coated. Thread the mushrooms on the skewers, putting 7 to 8 on each and leaving 3-inch handles at the ends.
  • Put the skewers on the grill with the handles resting on or just off the edge of the grill (for easier handling, since they will get very hot) and cover. Cook, turning the skewers every 2 minutes or so and brushing with the butter after every turn, until the mushrooms are slightly charred all over and softened, 8 to 9 minutes. Sprinkle with the thyme and parsley or lemon zest if using and season with salt. Alternatively, melt a little extra butter and add the thyme, parsley and/or lemon zest if using and drizzle over the mushrooms.

3 garlic cloves, minced
1/2 cup lemon juice, from about 3 lemons
1 cup extra virgin olive oil
1 teaspoon salt or 2 teaspoons kosher salt
1 teaspoon black pepper
1/4 teaspoon red pepper flakes
6 -8 boneless skinless chicken breasts
1/2 lb cremini mushroom, wiped clean

Steps:

  • In a medium bowl, combine the marinade ingredients. Reserve 1/4 cup of marinade for muahrooms.
  • In a large bowl, combine rest of marinade with the chicken breasts. Toss to combine. Cover and let marinate for at least 1 hour. If marinating for longer than 1 hour, make sure to refrigerate.
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Toss the mushrooms with 1/4 cup of the reserved unused marinade.
  • Grill the chicken breasts to an internal temperature of 165 degrees F, about 7 minutes a side.
  • Grill the mushrooms, about 2 minutes a side. Slice the mushrooms before serving, if desired.
  • Arrange grilled meats and vegetables on a large platter and serve immediately.

½ cup honey
½ teaspoon garlic powder

2 red bell peppers, cut into 2 inch pieces
1 large sweet onion, peeled and cut into wedges
1 ½ cups whole fresh mushrooms
1 pound beef sirloin, cut into 1 inch cubes
1 ½ pounds skinless, boneless chicken breast halves - cut into cubes

  • In a large resealable plastic bag, mix the teriyaki sauce, honey, garlic powder, and ginger. Place red bell peppers, onion wedges, mushrooms, beef, and chicken in the bag with the marinade. Seal, and refrigerate 4 to 24 hours.
