SAUTEED BAY SCALLOPS WITH LEMON BUTTER

Yield 4 servings

Number Of Ingredients 6

1 pound bay scallops
2 tablespoons olive oil
3 tablespoons unsalted butter
Juice of 1 lemon
1/4 cup chopped fresh parsley
Freshly ground black pepper

Steps:

  • Choose a saute pan large enough to hold all of the scallops in one layer without overcrowding the pan or without them touching each other. Cook in batches if necessary. Heat the oil and 1 tablespoon of the butter until nearly smoking. Add the scallops and do not move or shake pan, but allow the scallops to brown well on one side before tossing the pan to flip them or gently turning them with a spatula to cook the second side.
  • Remove the scallops from the pan and place on a warm serving platter. Return the pan in which the scallops had been cooked to the fire, add the remaining 2 tablespoons of sweet butter, and cook until the butter begins to turn a light brown color. When the butter has browned to a hazelnut color add the lemon juice and chopped parsley.
  • Pour the classic lemon butter over the scallops, garnish with heart-shaped croutons and serve promptly.

GRILLED SCALLOPS

Categories     appetizer

Time 22m

Yield 5 to 6 servings

Number Of Ingredients 5

20 to 25 large scallops (about 3 pounds)
5 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 1/2 tablespoons lemon pepper

Steps:

  • Pat dry each scallop and lay them on a tray. Sprinkle on some olive oil, coating scallops on all sides. Season the scallops with salt, black pepper, and lemon pepper, making sure that the seasoning covers all sides. Refrigerate until ready to cook.
  • Grill for about 2 to 3 minutes on each side. Serve immediately.

Tips:

  • Choosing the Right Scallops: Opt for dry scallops, as wet scallops contain more water and may not grill as well.
  • Thawing Frozen Scallops: If using frozen scallops, thaw them in the refrigerator overnight or place them in a colander in a bowl of cold water for about 30 minutes.
  • Pat Dry: Before grilling, pat the scallops dry with paper towels to prevent excess moisture from steaming them.
  • Simple Seasoning: Keep the seasoning simple to allow the natural flavor of the scallops to shine through.
  • High Heat: Use high heat to quickly sear the scallops, creating a nice crust while keeping the centers tender and juicy.
  • Don't Overcook: Scallops cook quickly, so be careful not to overcook them. They should be cooked for a total of about 2-3 minutes per side.
  • Baste with Butter: Basting the scallops with melted butter during grilling adds flavor and helps prevent them from drying out.
  • Serve Immediately: Grilled scallops are best served immediately, while they are still hot and juicy.
