Marinate shrimp in tequila and garlic, wrap them in bacon and grill them with lime.

Provided by Food Network Kitchen

Time 55m

Yield 6-8

Number Of Ingredients 7

16 jumbo shrimp, peeled, de-veined, and tail on (about 1 1/4 pounds)
1/2 cup tequila, preferably Anejo
4 garlic cloves, roughly chopped
Kosher salt and freshly ground black pepper
1 tablespoon olive oil, plus more for brushing the grill grates
16 slices bacon (not thick cut)
2 limes, each cut into 6 wedges

Steps:

  • Toss the shrimp in a large bowl with the tequila, garlic and a pinch each of salt and pepper. Cover and refrigerate for 30 minutes up to 1 hour.
  • Preheat an outdoor grill for medium heat.
  • Drain the shrimp and then toss with the oil and a generous pinch of salt and pepper. Wrap each shrimp with a slice of bacon. Thread 2 shrimp and 2 lime pieces on each skewer, alternating between the two.
  • Lightly oil the grill grates and grill until the bacon is crisp and shrimp are firm, flipping as needed, about 5 minutes.

Tips:

  • Use high-quality shrimp: Opt for large, fresh shrimp with a firm texture and a sweet flavor. Wild-caught shrimp are often considered to be tastier and more sustainable than farm-raised shrimp.
  • Prepare the shrimp properly: Devein and peel the shrimp, leaving the tails intact for easy handling. Make sure to rinse the shrimp thoroughly under cold water and pat them dry with paper towels before wrapping them in bacon.
  • Choose a flavorful bacon: Thick-cut bacon adds a crispy, smoky flavor to the shrimp. Look for bacon that is well-marbled and has a good balance of fat and meat.
  • Wrap the shrimp tightly: Use one slice of bacon per shrimp, wrapping it around the shrimp tightly but not too tightly. Secure the bacon with a toothpick to prevent it from unraveling during grilling.
  • Cook the shrimp over medium heat: This will help to prevent the bacon from burning while ensuring that the shrimp cooks through. Cook the shrimp for 8-10 minutes, or until the bacon is crispy and the shrimp is opaque.
  • Serve the shrimp immediately: Grilled bacon-wrapped shrimp are best served hot off the grill. Garnish with chopped parsley or cilantro, and serve with your favorite dipping sauce.
