16 oz cheese; half sharp cheddar and half monterey jack
8 oz cream cheese, softened
1/2 c mayonnaise, plus enough to spread on the sandwich
4 oz diced pimentos
1/8 tsp salt, pepper, and garlic powder
1 tsp onion powder
