Grilled Snapper and Asparagus with Red Pepper Sauce image

Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 11

3 tablespoons extra-virgin olive oil, plus more for the grill
1 large red bell pepper, seeded and chopped
2 cloves garlic, sliced
1 shallot, sliced
4 sprigs thyme
Kosher salt and freshly ground pepper
1 tablespoon sherry vinegar, plus more to taste
1/2 cup heavy cream
4 red snapper fillets (about 6 ounces each)
2 bunches asparagus, trimmed
2 tablespoons chopped fresh parsley

Steps:

  • Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add the bell pepper, garlic, shallot, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook until the bell pepper is tender, 6 to 8 minutes. Stir in the vinegar, scraping up any browned bits from the bottom of the pan; cook until mostly evaporated, about 1 minute. Add the heavy cream and bring to a boil, then reduce to a simmer. Cook, stirring occasionally, until slightly thickened, about 2 minutes; discard the thyme. Transfer the mixture to a blender and puree; season with salt and pepper and add up to 1 more teaspoon vinegar, if needed.
  • Preheat a grill to high and generously oil the grates. Rub the fish with 1 tablespoon olive oil and season with salt and pepper. Rub the asparagus with the remaining 1 tablespoon olive oil and season with salt and pepper. Grill the fish skin-side down until the skin is marked and crisp, about 3 minutes. Carefully flip and grill until just cooked through, 1 to 2 more minutes. Grill the asparagus, turning occasionally, until charred in spots, 4 to 5 minutes.
  • Spoon the pepper sauce onto plates. Top with the fish and asparagus; sprinkle with the parsley.

THE BEST GRILLED ASPARAGUS

The Best Grilled Asparagus image

We found that the best way to grill asparagus is to lay it right on the grill grates at an angle--no foil packet or grilling basket necessary. We jazzed ours up with tangy, creamy feta and fresh mint. To get a good char, be sure to use medium-sized asparagus -- no pencil-thin stalks here!

Provided by Food Network Kitchen

Categories     side-dish

Time 20m

Yield 4 servings

Number Of Ingredients 7

1 bunch medium asparagus (about 3/4 pound)
Juice of 1 lemon (about 1/4 cup)
2 tablespoons olive oil
1 clove garlic, finely grated
Kosher salt and freshly ground black pepper
2 tablespoons crumbled feta cheese (about 1 ounce)
1 tablespoon chopped fresh mint leaves

Steps:

  • Prepare a grill for medium heat. Chop the tough, woody ends off the asparagus (about 1 inch) and peel another inch of the stalks.
  • Whisk the lemon juice, olive oil, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Add the asparagus and toss until well coated.
  • Put the asparagus on the grill at an angle so the stalks don't fall through the grates. Grill, flipping halfway through cooking, until the asparagus begin to char, the pointy ends start to crisp and the stalks are just tender, 3 to 5 minutes. Remove to a platter and sprinkle with the feta and mint.

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 kg asparagus (2 pounds)
1/2 cup olive oil
salt and pepper, to taste
3 red bell peppers
1 tablespoon ginger, grated
3 tablespoons lemon juice
3 tablespoons olive oil
salt and pepper
1 garlic clove, minced (optional)

Steps:

  • Grill peppers over high heat turning as it browns about 20 minutes, or until the skins darken and blister. Remove the peppers from the grill, and place them in a paper bag. Close the bag by folding over twice. Set the peppers aside to cool. The steaming helps to loosen the skin.
  • Take the peppers from the bag and remove the skins, stems, and seeds. If necessary, rinse the peppers to make peeling easier.
  • Cut your roasted peppers in pieces and blend them with the other ingredients for the sauce with the food processor.
  • Place salsa in a bowl.
  • Snap off tough ends of asparagus.
  • Arrange 4-8 asparagus spears on a flat surface. Thread 2 (5 cm, 2-inch) skewers horizontally through spears 2-3 cm (1 inch) from each end to form a raft. Repeat procedure with remaining asparagus spears. Amount of skewers and asparagus depends on their size.
  • Prepare the other raft until all asparagus are fixed.
  • Brush asparagus with olive oil and season with salt and pepper.
  • Grill them for about 5 minutes and turn them on the other side for other 5-6 minutes (don't burn them).
  • Serve hot with salsa.
  • Tip: Prepare salsa with yellow and red peppers in saparate portions. Pop your table!

ASPARAGUS, SQUASH, AND RED PEPPER SAUTé

Asparagus, Squash, and Red Pepper Sauté image

An appealing vegetable trio is enlivened by a wine-scented sauté.

Yield 4 to 6 servings

Number Of Ingredients 6

1 1/2 tablespoons light olive oil
1/4 cup dry white wine
2 medium red bell peppers, cut into short strips
2 medium zucchini or yellow summer squash, halved lengthwise and sliced 1/4 inch thick
6 ounces slender asparagus, bottoms trimmed and cut into 1 1/2-inch lengths
Salt and freshly ground pepper to taste

Steps:

  • Heat the oil and wine in a wide skillet. Add the bell peppers, squash, and asparagus, and sauté over medium-high heat, stirring frequently, until all the vegetables are tender-crisp to your liking, about 8 minutes. Season with salt and pepper, and serve.
  • Now that the seasons for fresh produce have been stretched by imports, it's not quite as much of a thrill to see the first asparagus of early spring. A pity, since I once considered the arrival of asparagus to the market as much an awaited sign of spring as forsythia and robins. Still, I like to stick with vegetables that are in season by buying locally. Freshly picked, slender asparagus is more agreeable to my eyes and palate than thick, stringy imported winter asparagus.
  • Spring asparagus needs to have only about half an inch trimmed off the bottom of the stalks; scraping is unnecessary when the stalks are slender. Asparagus makes a good side dish, simply steamed, with a tiny bit of nonhydrogenated margarine or whipped butter added. Microwave cooking yields good results; place the stalks in a small casserole dish with just enough water to keep them moist. Cover and cook until tender-crisp to your liking. How long this takes depends on the quantity and quality of the asparagus, so test often and serve right away.
  • Another great way to prepare slender asparagus is to cut it into 2- to 3-inch lengths and sauté it in olive oil with minced garlic.

GRILLED OR OVEN ROASTED BELL PEPPERS AND ASPARAGUS

Grilled or Oven Roasted Bell Peppers and Asparagus image

Make and share this Grilled or Oven Roasted Bell Peppers and Asparagus recipe from Food.com.

Provided by ARathkamp

Categories     Vegetable

Time 35m

Yield 4 serving(s)

Number Of Ingredients 9

1 bunch fresh asparagus
1 yellow bell pepper, cut into thin strips
1 orange bell pepper, cut into thin strips
1/2 cup butter, melted (or can use olive oil)
1/2 teaspoon red pepper flakes (or to taste)
3 garlic cloves, minced
1 tablespoon instant minced onion
1/4 teaspoon salt (to taste)
1/4 teaspoon fresh ground black pepper

Steps:

  • Fire up the grill or preheat oven to 400 degrees.
  • Make butter sauce (or olive oil) by mixing melted butter with red pepper flakes, dried minced onions, and minced garlic.
  • Line a cookie sheet with foil.
  • Trim asparagus and cut off hard ends.
  • Arrange asparagus spears and sliced bell peppers on foil lined cookie sheet.
  • Coat vegetables with salt and fresh ground black pepper.
  • Dirzzle butter sauce over vegetables. Toss to coat evenly.
  • Bake for 20 minutes or until asparagus is just tender, but still crisp.

Tips:

  • Choose the right asparagus: Look for asparagus spears that are bright green and have tightly closed tips. Avoid spears that are woody or have yellow or brown spots.
  • Trim the asparagus: Cut off the tough ends of the asparagus spears, about 1-2 inches from the bottom.
  • Blanch the asparagus: Blanching helps to preserve the asparagus's color and flavor. To blanch the asparagus, bring a large pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes, or until the asparagus is tender-crisp. Immediately transfer the asparagus to a bowl of ice water to stop the cooking process.
  • Marinate the asparagus: Marinating the asparagus in a mixture of olive oil, garlic, and herbs will add flavor to the asparagus. You can also add other ingredients to the marinade, such as lemon juice, balsamic vinegar, or honey.
  • Grill the asparagus: Preheat your grill to medium-high heat. Brush the asparagus with olive oil and grill for 5-7 minutes, or until the asparagus is tender and slightly charred.
  • Make the red bell peppers sauce: While the asparagus is grilling, make the red bell peppers sauce. To make the sauce, simply roast red bell peppers in the oven until they are tender. Then, blend the roasted red bell peppers with olive oil, garlic, and herbs until smooth.
  • Serve the asparagus: Serve the grilled asparagus with the red bell peppers sauce. You can also garnish the asparagus with Parmesan cheese, crumbled bacon, or chopped nuts.

Conclusion:

Grilled asparagus with red bell peppers sauce is a delicious and healthy side dish that is perfect for any occasion. The asparagus is tender and flavorful, and the red bell peppers sauce adds a sweet and smoky flavor. This dish is sure to be a hit with your family and friends.
