Categories     side-dish

Time 35m

Yield 6 servings

Number Of Ingredients 6

2 1/2 pounds fresh asparagus (about 30 large)
2 tablespoons good olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan
2 lemons cut in wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.

Tips:

- Choose thin to medium-sized asparagus spears for grilling. Thicker spears will take longer to cook and may not cook evenly. - Trim the woody ends of the asparagus spears before grilling. - Toss the asparagus spears with olive oil, lemon juice, salt, and pepper before grilling. This will help them to cook evenly and prevent them from sticking to the grill grates. - Grill the asparagus spears over medium-high heat for 3-5 minutes per side, or until they are tender and slightly charred. - Serve the grilled asparagus spears immediately, topped with grated Parmesan cheese and additional lemon wedges.

Conclusion:

Grilled asparagus with olive oil, lemon, and Parmesan is a simple but delicious side dish that is perfect for any occasion. It is easy to make and can be customized to your liking. For example, you can add other herbs and spices to the olive oil and lemon marinade, or you can top the grilled asparagus with different cheeses, such as crumbled feta or goat cheese. No matter how you serve it, grilled asparagus is a healthy and flavorful dish that is sure to please everyone at your table.
