Time 18m

Yield 4 serving(s)

Number Of Ingredients 9

2 medium onions, sliced
1/4 cup balsamic vinegar
1/8 teaspoon sugar
1/8 teaspoon dried thyme
1/8 teaspoon dried rosemary, crushed
1 tablespoon vegetable oil
4 (10 inch) flour tortillas
2 medium tart apples, sliced
8 ounces brie cheese or 8 ounces camembert cheese, rind removed and quartered

Steps:

  • In a skillet over medium heat, cook the onions, vinegar, sugar, thyme and rosemary in oil for 10 minutes or until onions are golden.
  • Spoon the mixture over half of each tortilla and top with apples and cheese.
  • Fold over.
  • Cook on a griddle over medium heat for 2-3 minutes on each side or until cheese is melted.

Tips:

  • Choose ripe, firm apples: Softer apples will break down too much during grilling and become mushy.
  • Use a good quality cheese: Brie is a classic choice for grilled cheese sandwiches, but you can also experiment with other cheeses that melt well, such as cheddar, Gruyère, or fontina.
  • Don't overcrowd the pan: If you're cooking multiple quesadillas at once, make sure to leave enough space between them so that they can cook evenly.
  • Cook the quesadillas over medium heat: This will help to prevent the cheese from burning and will give the apples time to soften.
  • Serve the quesadillas immediately: They're best when they're hot and gooey!

Conclusion:

Grilled apple and brie quesadillas are a delicious and easy-to-make appetizer or lunch. They're perfect for parties, picnics, or potlucks. The sweet apples and creamy brie cheese are a perfect combination, and the strawberry-apple dipping sauce adds a delicious finishing touch. So next time you're looking for a quick and easy meal, give these grilled apple and brie quesadillas a try!
