GRILLED STRAWBERRY SHORTCAKE

Categories     dessert

Time 30m

Yield 4 servings

Number Of Ingredients 8

2 tablespoons vegetable oil
20 strawberries, hulled
Four 3- to 4-inch-thick slices cut from a store-bought angel food cake
1 cup heavy whipping cream
8 ounces mascarpone
2 tablespoons confectioners' sugar
2 tablespoons store-bought balsamic glaze
4 sprigs fresh mint

Steps:

  • Heat a grill to medium-high heat or place a grill pan on the stove over medium-high heat. Generously grease the grill grates with the vegetable oil. Slide 5 strawberries on a skewer, pushing the skewer through the cores. Repeat this process to assemble 3 more skewers. Place the skewers on the grill and cook, turning as needed, until dark grill marks are created, 3 to 4 minutes per side. Remove half the strawberries from the skewers to a large bowl and use a fork to mash them. Stir in the remaining strawberries and set aside.
  • Grill the cake slices until they have grill marks, 30 to 45 seconds per side (do not let the cake slices cook for more than 1 minute or they will start to stick).
  • Combine the whipping cream, mascarpone and confectioners' sugar in the bowl of an electric mixer. Whip until stiff peaks form, about 4 minutes. Plate the cakes individually and top each with some strawberries. Drizzle the balsamic glaze over the berries. Dollop the whipped cream on top and garnish each plate with a sprig of fresh mint. Serve immediately.

"When it's really hot, I like a lighter dessert. The chocolate makes it still feel decadent."

Provided by Trisha Yearwood

Categories     dessert

Time 2h

Yield 10 servings

Number Of Ingredients 10

3/4 cup sifted cake flour
1 1/2 cups sugar
1/4 cup unsweetened cocoa powder
12 large egg whites, at room temperature
Pinch of salt
1 1/2 teaspoons cream of tartar
3/4 teaspoon pure vanilla extract
For the strawberries:
3 cups strawberries, sliced
2 tablespoons sugar

Steps:

  • Make the cake: Preheat the oven to 375 degrees F. On a sheet of waxed paper, sift the cake flour with 3/4 cup of the sugar and the cocoa 4 times.
  • Using an electric mixer fitted with the whisk attachment, beat the egg whites along with a pinch of salt until foamy, about 3 minutes. Sprinkle the cream of tartar over the egg whites and continue to beat until they hold a soft peak, about 5 minutes. Beating continuously, add the vanilla and gradually stream in the remaining 3/4 cup sugar, about 2 tablespoons at a time, until the egg whites are thick, glossy and stiff.
  • Remove the bowl from the mixer, and using a spatula, gradually fold in the flour mixture, about 1/4 cup at a time, until there are no more pockets of dry ingredients. Spoon the batter into an ungreased 9-inch tube pan. Bake until the cake springs back when pressed with your finger, about 30 minutes. Remove the pan from the oven, invert, and allow the cake to cool on a rack 1 hour before loosening the cake from the pan with a knife and unmolding.
  • Meanwhile, make the strawberries: Sprinkle the sliced strawberries with the sugar. Stir to coat and let stand about 30 minutes to allow the juices to develop. Top each cake slice with strawberries and their juices before serving.

Tips:

  • Choose a ripe pineapple: A ripe pineapple will have a sweet, fragrant smell and a slightly soft, yielding flesh. Avoid pineapples that are too hard or have brown spots.
  • Cut the pineapple properly: To cut a pineapple, first slice off the top and bottom. Then, cut the pineapple into quarters lengthwise. Remove the core from each quarter, then cut the quarters into slices.
  • Use a sharp knife: A sharp knife will help you cut the pineapple cleanly and evenly. A dull knife will tear the pineapple and make it difficult to cut.
  • Grill the pineapple over medium heat: Medium heat will help the pineapple caramelize without burning it. If the heat is too high, the pineapple will burn on the outside before it has a chance to cook through.
  • Serve the grilled pineapple immediately: Grilled pineapple is best served immediately, while it is still warm and juicy. You can serve it on its own, with a dollop of whipped cream or ice cream, or as a topping for yogurt or oatmeal.

Conclusion:

Grilled pineapple is a delicious and versatile fruit that can be enjoyed in many different ways. It is a healthy and refreshing snack, and it can also be used as a topping for desserts or main courses. If you are looking for a new and exciting way to enjoy pineapple, try grilling it. You won't be disappointed!
