RED-RIBBON ROASTED SALSA

Red-Ribbon Roasted Salsa image

This recipe originated from a recipe that was supposed to duplicate that of my favorite Mexican restaurant. I've heavily modified the original recipe and like this variation SO much more! It's relatively easy. This makes a medium-hot salsa. I've named it 'Red-Ribbon' because it took second place at my company salsa competition last Cinco de Mayo (lost first in a tie-breaker!).

Time 3h

Yield 12

Number Of Ingredients 8

10 dried chipotle peppers
12 roma (plum) tomatoes
¼ yellow onion, coarsely chopped
2 cloves garlic, or more to taste
2 tablespoons white vinegar
2 teaspoons salt
1 pinch ground black pepper, or to taste
1 lime, juiced, or more to taste

Steps:

GRIDDLED TOMATO-CHIPOTLE SALSA

Yield Makes about 4 cups

Number Of Ingredients 9

6 ripe tomatoes, cut in half
2 tablespoons olive oil
1 cup sliced onions
4 jalapeño chiles, seeded and sliced
4 garlic cloves, chopped
2 tablespoons chipotle chile puree
1/2 cup chopped fresh cilantro leaves
1/2 cup freshly squeezed lime juice
2 teaspoons salt

Steps:

  • Place a large cast-iron skillet over high heat for about 3 minutes, or until smoking. Add the tomatoes to the skillet and char on both sides until black and somewhat soft, about 8 to 10 minutes. Remove from the skillet and set aside. Reduce the heat to medium, and after two minutes, pour the olive oil into the skillet. Immediately add the onions, jalapeños, and garlic and sauté for about 3 minutes, stirring occasionally, until the vegetables are soft. Transfer the onion mixture to a food processor with the griddled tomatoes. Process until all the ingredients are well blended. Transfer to a mixing bowl, add the chile puree, cilantro, lime juice, and salt, and stir well to combine. Serve at room temperature. Keeps for up to 1 week, refrigerated.

Tips:

  • Choose ripe, juicy tomatoes: The quality of your tomatoes will make a big difference in the flavor of your salsa. Look for tomatoes that are firm to the touch and have a deep red color.
  • Roast the tomatoes: Roasting the tomatoes intensifies their flavor and gives them a slightly smoky taste. You can roast the tomatoes in the oven or on a grill.
  • Use fresh herbs: Fresh herbs add a bright, flavorful touch to salsa. Cilantro, basil, and oregano are all good choices.
  • Don't over-blend: Salsa should have some texture. A few chunky pieces of tomato and onion add interest and flavor.
  • Taste and adjust seasonings: Every salsa is different, so taste it and adjust the seasonings to your liking. You may want to add more salt, pepper, or lime juice.

Conclusion:

Griddled Tomato Chipotle Salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It's perfect for tacos, burritos, enchiladas, and quesadillas. You can also use it as a dipping sauce for chips or vegetables. No matter how you choose to enjoy it, this salsa is sure to be a hit!
