This is a recipe from my early days of cooking. The first time I made these was for the Grey Cup (Canadian Football Championship) of 1992 and they've been yummy ever since. Enjoy. This is a great base for nachos. Top with grated cheese, sour cream, salsa, green onions--whatever you like.

- Place the ground beef in a large skillet over medium-high heat. Cook, stirring to crumble, until no longer pink. Add onion and cook until tender. Drain off grease. Stir in the contents of the seasoning packet and any water if needed in order to prepare according to package directions.
- When the meat is done cooking, add the bell pepper, jalapeno pepper and sliced mushrooms to the skillet, and lower heat to medium. Cook and stir until vegetables are about halfway cooked, 3 to 4 minutes. Stir in the cheese sauce until everything is evenly coated.
- Serve tortilla chips topped with the meat and cheese sauce, or serve buffet style where each person can top their own nachos.

Steps:
- 1. Brown Ground Beef in Non Stick Frying Pan and drain off fat and put in Slow Cooker.
- 2. In same frying pan saute onions in a little oil until soft. About 5 minutes. Add garlic and saute until fragrant. About 2 minutes. Add to Slow Cooker.
- 3. Add all other ingredients to Slow Cooker except Sour Cream, Cheddar Cheese, Hot Sauce, and Nachos.
- 4. Mix well and set to low for about 6 hours.
- 5. Stir and adjust seasoning. This is a rather spicy chilli but if you like it really hot feel free to add more "hot" spices or hot sauce to suit your preference. Cook on low for another 2 hours to give spices a chance to blend in.
- 6. Serve in a bowl or large cup with Cheddar Cheese and a dollop of Sour Cream in the middle. Place Nachos on plate around cup and serve.
- 7. NOTE: This freezes extremely well. You can also make it the night before. Just make sure to refrigerate and give it an extra hour cooking time. I usually have a bag of buns precut and buttered for those that prefer. Although this recipe is spicy it is not "firehouse hot" more of a slow burn that will have you sniffling and tearing by the time the bowl is done.

- In a large frying pan, brown ground beef with onion, salt and pepper over medium heat. Break the meat into very small pieces while it is cooking. After the meat is thoroughly cooked, drain off the grease.
- Arrange chips on a microwavable platter. Spread beans over the chips. Layer with 1/2 of the cheese, the ground beef mixture, and remaining cheese. Arrange jalapeno peppers on top.

GREEK-STYLE NACHOS
Nachos can be fun as a bar food, but they're usually not much more than that. Here, I'm substituting like mad to create what you might call Greek-style nachos. Mine go like this: pita triangles toasted with olive oil; a sauce of feta and yogurt, spiked with mint and lemon; a topping of ground lamb with onion and cumin; and a garnish of tomatoes, cucumbers and olives. The whole thing takes maybe a half-hour, and it's all familiar except for the arrangement.

- Heat oven to 350 degrees Arrange pita wedges in one layer on baking sheets and brush or drizzle with a tablespoon or two of olive oil. Bake until they begin to color, turning once or twice, about 10 minutes. Sprinkle with salt, turn off oven and put chips back in to keep warm.
- In a blender or food processor, combine feta, yogurt, 1/4 cup olive oil, mint and zest and juice of lemon; sprinkle with salt and pepper. Blend or process until smooth. (You can also mash mixture by hand, with a fork.)
- Put two tablespoons of oil in a skillet over medium-high heat and cook onions until soft, about 5 minutes.
