Time 40m

Yield 6 servings

Number Of Ingredients 12

1-1/3 cup sugar
1/3-cup water
1 cup cream
1 egg yolk
1 egg
2 oz. melted butter
1 tsp. vanilla
1-1/2 cups walnuts
2 9-inch store-bought pastry shells
2 cups of beans
parchment paper
8-oz. chocolate bar

Categories     dessert

Time 50m

Number Of Ingredients 14

1 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
6 tablespoons cold unsalted butter
1 large egg
1 large egg yolk
1 bunch scallions, trimmed and sliced
2 tablespoons butter
1 cup coarsely grated Swiss Gruyere cheese
3/4 cup chopped walnuts, lightly toasted
1/2 cup milk
1/2 cup heavy whipping cream
3 large eggs
Salt, pepper and nutmeg

Steps:

  • For the dough, combine the dry ingredients in the bowl of a food processor. Pulse to mix. Cut butter into 12 pieces and add; pulse to mix in finely. Add egg and yolk and pulse to form a ball -- if it resists, add a teaspoon of water and continue. Form the dough into a disk and wrap in plastic. Refrigerate until needed, up to 2 days. When ready to bake the tart, preheat oven to 350 degrees and set a rack in the lowest level. On a floured surface, roll the dough and use it to line a 9 to 10-inch tart pan. For the filling, melt the butter in a small saute pan and cook the scallions for a few minutes to wilt them. Scrape onto the dough and spread evenly. Cover with the grated cheese and walnuts.
  • Whisk the remaining ingredients together in a bowl and pour into the tart crust. Bake the tart for about 30 minutes, or until the filling is brown and puffed and the crust is baked through. Serve immediately or cool and serve later.

WALNUT TART

Walnut Tart image

If you seek inspiration for a better pie, you need look no further than a traditional French walnut tart. It is only marginally different, but vive that difference. The reason is butter: butter in the crust and butter in the filling. Oh, and cream in the filling, too. If they had pecans in France I'm sure they would use them, as you could in this recipe.

Time 40m

Yield 8 to 12 servings

Number Of Ingredients 6

1 stick butter, more for smearing foil
1 unbaked pastry shell in a 9-inch pie pan
1 1/2 cups sugar
1/2 cup cream
2 1/2 cups roughly chopped walnuts (there should be large chunks)
Salt to taste

Steps:

  • Preheat oven to 400 degrees. Tear off a piece of foil twice as large as crust. Fold it in half and smear it with butter; lay buttered side onto crust. Weight foil with a pile of dried beans or rice (these can be reused for this purpose), pie weights, or a tight-fitting ovenproof skillet or saucepan - anything that will sit flat on the surface. Bake 12 minutes, then remove foil and continue to bake at 350 degrees, until crust is a beautiful shade of brown, another few minutes. Remove and let cool on a rack while you prepare filling.
  • Put sugar in a heavy 6- or 8-inch saucepan or deep skillet with a tablespoon of water and turn heat to medium. Cook, gently shaking pan occasionally, until sugar melts; then cook, stirring occasionally and scraping sides with a heat-proof flexible spatula, until mixture turns golden.
  • Turn heat to low, then carefully add butter and cream. Cook, stirring constantly, until butter melts and mixture is uniform. Stir in walnuts and a large pinch of salt if you like, then spread on crust. Refrigerate for about an hour, then sprinkle with a little more salt and serve.

Tips:

  • Use high-quality ingredients. Fresh walnuts, butter, and flour will make a big difference in the final flavor of the tart.
  • Don't overmix the dough. Overmixing will make the dough tough. Mix it just until it comes together.
  • Blind bake the crust. This will help to prevent it from becoming soggy. To blind bake the crust, preheat the oven to 350 degrees Fahrenheit. Line the tart pan with parchment paper and fill it with pie weights or dried beans. Bake for 15-20 minutes, or until the crust is golden brown.
  • Use a variety of nuts. You can use all walnuts, or you can mix in other nuts, such as pecans, almonds, or hazelnuts.
  • Don't overcook the filling. The filling should be just set, but not too firm. Overcooking will make the filling tough.
  • Let the tart cool completely before serving. This will help the filling to set and the flavors to develop.

Conclusion:

Grenoble tart is a delicious and classic French dessert that is perfect for any occasion. With its rich, buttery flavor and crunchy walnuts, it is sure to be a hit with everyone who tries it. So next time you are looking for a special treat, give this recipe a try!
