Yield 5 - 1/2 pints

Number Of Ingredients 9

1 quart chopped green tomato
1 large sweet white onion, chopped
1 large green pepper, chopped
2 tablespoons canning salt
1 cup sugar
1 tablespoon prepared mustard
1 teaspoon celery salt
4 whole cloves
1 cup vinegar (5% acidity)

Steps:

  • Combine tomatoes, onion, and pepper in large bowl. Sprinkle salt over vegetables, mix in,and let stand 1 hour. Drain vegetables. Combine drained vegetables, sugar, mustard, and celery salt in a large pot. Tie cloves in cheesecloth and add to mixture. Stir in vinegar and simmer for 20 minutes. Take out spice bag. Pack hot relish into hot jars. Leave 1/4 inch headspace. Place canning lids on jars. Process half pints for 10 minutes in hot water bath.

Tips:

  • For best results, use firm, slightly underripe green tomatoes. Overripe tomatoes will result in a relish that is too soft and mushy.
  • To easily remove the skins from the tomatoes, blanch them in boiling water for 30 seconds to 1 minute, then transfer them to an ice bath. The skins will slip right off.
  • If you don't have time to blanch the tomatoes, you can also peel them with a vegetable peeler.
  • For a spicier relish, add more chili peppers. For a milder relish, remove the seeds from the chili peppers before chopping them.
  • Add sugar to taste. Some people prefer a sweet relish, while others prefer a more tart relish.
  • Store the relish in a clean glass jar in the refrigerator for up to 2 months.

Conclusion:

Green tomato relish is a delicious and versatile condiment that can be enjoyed on hot dogs, hamburgers, sandwiches, and more. It's also a great way to use up extra green tomatoes from your garden.
