In the realm of culinary delights, few dishes can rival the comforting appeal of a gratin. Its golden-brown, bubbly surface beckons like a siren's song, promising a symphony of flavors and textures that will tantalize the taste buds. This article presents two enticing gratin recipes, each offering a unique culinary journey.

The first recipe, Green Tomato and Swiss Chard Gratin, is a vibrant and hearty dish that celebrates the bounty of fresh produce. Tangy green tomatoes, sautéed with garlic and onions, meld harmoniously with earthy Swiss chard, creating a flavorful base. A creamy béchamel sauce, rich with Gruyère cheese, envelops the vegetables, adding a velvety richness. As the gratin bakes in the oven, the cheese melts and bubbles, forming an irresistible crust that contrasts beautifully with the tender vegetables underneath.

The second recipe, Butternut Squash and Sweet Potato Gratin, is an autumnal delight that showcases the natural sweetness of these seasonal vegetables. Roasted butternut squash and sweet potatoes, caramelized to perfection, are nestled in a creamy sauce infused with nutmeg, cinnamon, and a hint of cayenne pepper. A sprinkling of crispy breadcrumbs adds a delightful textural element, while a blend of Parmesan and Gruyère cheeses provides a salty, nutty balance. Baked until golden brown, this gratin exudes warmth and comfort, making it the perfect dish to chase away the chill of a crisp autumn evening.

GREEN TOMATO AND VIDALIA ONION GRATIN

Green Tomato and Vidalia Onion Gratin image

Provided by Claire Robinson

Categories     side-dish

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 6

1/4 pound bacon
1 cup fresh bread crumbs
2 large Vidalia onions, peeled and sliced into 1/4-inch thick rounds
4 large green tomatoes, sliced 1/4-inch thick
Kosher salt and freshly cracked black pepper
6 ounces sharp white Cheddar, grated, about 1 1/2 cups

Steps:

  • Preheat the oven to 350 degrees F.
  • Render bacon in a large skillet over medium heat. Transfer the cooked bacon to a paper towel lined plate. Add the bread crumbs to a small bowl. Remove 2 tablespoons of the bacon fat from the skillet and stir into the bread crumbs. Add the onion rounds to the skillet in batches and cook, without breaking the round slices apart, until there is some golden color, about 5 to 6 minutes per side.
  • To assemble the gratin, overlap the green tomato slices in 1 row in a large baking dish, about 9 by 11 inches. Next, make a row slightly overlapping of the partially cooked onion rounds, being careful to keep the slices intact. Repeat steps until all tomatoes and onions are used. Season tomatoes and onions lightly with salt and heavily with pepper. Crumble the bacon over the vegetables; sprinkle the grated Cheddar over the top followed by the bread crumbs. Bake until the cheese is bubbly, about 30 to 45 minutes. If the top is getting too brown, loosely cover with foil.

Time 1h45m

Yield 6 to 8 servings

Number Of Ingredients 12

Salt
1 pound Swiss chard leaves and slender stems, stems cut into 1/4-inch cubes
2 1/2 cups heavy cream
1 garlic clove, smashed
1 small shallot, sliced
2 thyme sprigs
1 bay leaf
1/4 teaspoon freshly grated nutmeg
3 pounds (6 to 8 medium) Yukon Gold potatoes, peeled
1 tablespoon butter, at room temperature
Pepper
6 ounces grated Gruyère

Steps:

  • Heat the oven to 350 degrees, and place rack in the center. Bring a large pot of lightly salted water to a boil; set a bowl of ice water on the side. Boil the chard leaves until tender, 3 to 5 minutes, then transfer with a slotted spoon to the ice water. Squeeze them dry and chop roughly. Boil the diced stems until tender, 3 to 5 minutes. Drain well and add to chopped chard leaves.
  • In a small saucepan, bring the heavy cream, garlic, shallot, thyme and bay leaf to a simmer. Cook until reduced by half, about 25 minutes. Strain out the solids and add the nutmeg.
  • Meanwhile, slice the potatoes into 1/8-inch-thick rounds with a mandoline or sharp knife. Butter a 12- to 14-inch gratin dish. Assemble the gratin by layering the ingredients in this order: a single, slightly overlapping layer of one-third of the potato slices, a sprinkling of salt and pepper, one-third of the Gruyère, half the Swiss chard and one-third of the reduced cream. Repeat once, and then top with one more layer of potato, salt and pepper, and the rest of the Gruyère and cream.
  • Bake until the top is browned and the potatoes are fork-tender, about 45 minutes.

SWISS CHARD GRATIN

Swiss chard gratin image

Pickling the chard first gives it a very deep, robust flavour. Goes well with venison or a meaty fish like turbot or halibut cooked on the bone

Provided by Tom Kerridge

Categories     Dinner, Main course

Time 55m

Number Of Ingredients 11

400g Swiss chard
3 star anise
200g golden caster sugar
300g white wine vinegar
1 tbsp coriander seeds
1 tbsp white pepper
1 tbsp fennel seeds
300ml pot double cream
3 garlic cloves , grated
100g gruyère , grated
good pinch of cayenne pepper

Steps:

  • To pickle the chard, put 400ml water in a large saucepan or sauté pan with the star anise, sugar and vinegar. Put the remaining spices in a cloth bag tied with string, add to the pan, bring to the boil, then drop in the chard, stalk first. Press the chard down in the pan and simmer for 3-4 mins - don't worry if you can't cover the leaves completely in the liquid, as they will wilt and become submerged while cooking. Remove the pan from the heat and leave to cool.
  • Heat oven to 180C/160C fan/gas 4. Once cooled, remove the chard from the pickle mix and pat dry with a clean kitchen towel. Lay the chard in an A4-sized baking dish. In a bowl, whisk the cream and garlic together with some seasoning, then pour over the chard. Sprinkle over the cheese and cayenne pepper, and bake for 30 mins.

Yield Makes 6 servings

Number Of Ingredients 12

5 tablespoons unsalted butter
1 cup fresh white bread crumbs
3 oz Tomme de Savoie or Gruyère cheese, grated (1 cup)
1 garlic clove, halved lengthwise, germ removed if green, and garlic finely chopped
1 tablespoon finely chopped mixed fresh herbs (preferably chives, tarragon, and flat-leaf parsley)
1/8 teaspoon freshly grated nutmeg
1 cup low-sodium chicken broth
1/2 cup heavy cream
1 tablespoon all-purpose flour
1 medium onion, finely chopped
3 lb Swiss chard, leaves and stems separated and both cut into 1-inch pieces
1 lb spinach, coarse stems discarded, leaves coarsely chopped

Steps:

  • Boil broth in a small saucepan until reduced by half. Add cream and keep warm.
  • Melt 1 tablespoon butter in a small heavy saucepan over moderate heat and stir in flour. Cook roux, whisking, 1 minute, then whisk in broth mixture and boil, whisking, 1 minute. Season sauce with salt and pepper.
  • Preheat oven to 400°F.
  • Cook onion in remaining 2 tablespoons butter in a wide 8-quart heavy pot over moderately low heat, stirring, until softened. Add chard stems, remaining nutmeg, and salt and pepper to taste and cook, stirring, until vegetables are tender but not browned, about 8 minutes.
  • Increase heat to moderately high and add chard leaves and spinach by large handfuls, stirring, until all greens are wilted. Season with salt and pepper.

  • Top vegetables with bread crumbs and bake in middle of oven until bubbling and topping is golden, about 20 minutes.

Tips:

  • For the best flavor, use ripe green tomatoes. They should be firm and have no blemishes.
  • To easily remove the skin from the tomatoes, blanch them in boiling water for 1-2 minutes, then transfer them to an ice bath.
  • Use a sharp knife to thinly slice the tomatoes and Swiss chard.
  • Layer the tomatoes and Swiss chard in a greased baking dish, seasoning each layer with salt, pepper, and garlic powder.
  • Pour the cream mixture over the vegetables and bake the gratin in a preheated oven until the vegetables are tender and the sauce is bubbly.
  • Serve the gratin hot with a green salad or your favorite side dish.
