GREEN TOMATO AND ONION CASSEROLE

Green Tomato and Onion Casserole image

our garden is over flowing with tomato's but some have been stung by a bug and so we harvested many of the tomato's while still green and I have frozen some and today I made this casserole for our supper. I happen to like green tomatoes and thats a good thing seeing that the bowl is overflowing with them! LOL

Provided by Shirley Makekau

Categories     Vegetables

Time 1h5m

Number Of Ingredients 6

green tomatoes
1 large onion. sliced
2 english muffines
sea salt
pepper
3 Tbsp margarine

Steps:

  • 1. I used the smaller green tomotoes and sliced enough for making two layers.
  • 2. After slicing the onion I cooked it in a sauce pan with the butter until transparent. remove from the stove and remove the onions to a small bowl.
  • 3. crumble up the engish muffins ( or whatever bread you want to use) I used english muffins as I had only 2 left and wanted to use them up. Anyway, crumble them into the pan you cooked the onions in as there should be enough butter in there to coat the bread and brown a little. Remove from pan and get ready to put together the casserole.
  • 4. Take your sliced tomatoes and line them in the bottom of the dish you are going to bake them in.
  • 5. Add a layer of onion over first row of tomatoes.
  • 6. Add salt and pepper
  • 7. add another layer of tomato and another layer of onion.
  • 8. add some salt and pepper
  • 9. place the toasted bread over all
  • 10. Bake 350 degrees for 45-60 minutes

ORECCHIETTE WITH GREEN TOMATOES, CARAMELIZED ONIONS, AND CORN

Orecchiette with Green Tomatoes, Caramelized Onions, and Corn image

Sauteinggreen tomatoes takes theedge off their tanginess, butthey're still tart enough tocut the sweetness of caramelized Vidalia onions and freshcorn.

Provided by Martha Stewart

Categories     Pasta and Grains

Number Of Ingredients 8

2 tablespoons unsalted butter
1 large Vidalia or other sweet onion, cut into 1/4-inch-thick slices
2 pounds green tomatoes (about 6 medium), coarsely chopped
3 tablespoons sugar
1 cup fresh corn kernels (about 2 ears)
Coarse salt and freshly ground pepper
1 tablespoon chopped fresh thyme
1 pound orecchiette or other short, dried pasta, cooked according to package instructions

Steps:

  • In a large skillet over medium heat, melt butter. Add the onion, and cook, stirring, until it begins to soften, about 6 minutes. Add tomatoes, and sprinkle sugar over mixture. Cook, stirring, until tomatoes are tender and golden brown, about 20 minutes.
  • Add corn to skillet; season with salt and pepper. Cook, stirring, until corn is tender and just starting to brown, about 4 minutes. Stir in thyme.
  • Add the vegetable mixture to the cooked pasta, and stir until combined. Serve immediately.

Tips:

  • Choose firm, green tomatoes: Avoid tomatoes that are soft or have blemishes, as these will not hold their shape well in the casserole.
  • Slice the tomatoes evenly: This will help them cook evenly in the casserole.
  • Use a large skillet to cook the tomatoes and onions: This will give them plenty of room to brown and caramelize.
  • Don't overcrowd the skillet: If you do, the tomatoes and onions will steam instead of brown.
  • Season the tomatoes and onions generously: Use salt, pepper, garlic powder, and onion powder to taste.
  • Use a baking dish that is large enough to hold the tomato-onion mixture: A 9x13 inch baking dish is a good option.
  • Bake the casserole for 30-40 minutes, or until the tomatoes are soft and the casserole is bubbly: Check the casserole halfway through cooking and stir it gently to ensure that the tomatoes and onions are cooking evenly.
  • Serve the casserole hot: This dish is best enjoyed fresh out of the oven.

Conclusion:

This green tomato and onion casserole is a delicious and easy way to use up your green tomatoes. It is a versatile dish that can be served as a side dish, a main course, or even a breakfast casserole. The tomatoes and onions are cooked until they are soft and caramelized, and the casserole is seasoned with a blend of herbs and spices. This casserole is sure to be a hit with your family and friends.
