Yield Makes about 32

Number Of Ingredients 5

3 large egg whites, room temperature
2/3 cup granulated sugar
Pinch coarse salt
2 tablespoons confectioners' sugar
1 tablespoon matcha

Steps:

  • Preheat oven to 175 degrees. Line a rimmed baking sheet with parchment.
  • Place egg whites, granulated sugar, and salt in a heatproof bowl. Set bowl over a pot with a few inches of barely simmering water; cook, whisking constantly, until mixture is warm, frothy and sugar is dissolved, 1 to 2 minutes. Remove bowl from heat and, using an electric mixer, beat on high until stiff, glossy peaks form, about 3 minutes. Place confectioners' sugar and matcha in a small sieve; sift over egg white mixture and gently fold in with a rubber spatula.
  • Fit a large pastry bag with a 1/2-inch round tip and fill with meringue. Pipe 1 1/2-inch kisses onto prepared baking sheet. Bake until dry, rotating pan halfway through, about 2 hours. Let cool completely on sheet on a wire rack before peeling off parchment. Store in an airtight container for up to 1 week.

Tips:

  • To make the perfect meringue, whip the egg whites until they are stiff and glossy. This will help the cookies hold their shape and give them a light and airy texture.
  • Be sure to use superfine sugar when making the meringue. This will help the sugar dissolve more easily and prevent the cookies from becoming grainy.
  • If you don't have a piping bag, you can use a spoon to drop the meringue onto the baking sheet. Just be sure to space the cookies out evenly so they don't touch each other.
  • Bake the cookies at a low temperature for a long period of time. This will help them dry out and become crispy.
  • Let the cookies cool completely before storing them. This will help them keep their shape and prevent them from becoming sticky.

Conclusion:

Green tea meringue cookies are a delicious and delicate treat that are perfect for any occasion. They are easy to make and can be customized with different flavors and toppings. So next time you are looking for a special dessert, give these cookies a try!
