GREEN PEACH SALAD WITH SIMPLE LIME DRESSING

Green Peach Salad With Simple Lime Dressing image

Eddie Hernandez, who runs a string of Mexican restaurants in Georgia and Tennessee called Taqueria del Sol, came up with a delicious way to deal with hard, unripe peaches. Sliced thinly, softened with salt and brightened with lime juice and Serrano chiles, the peaches become a salad that's a cousin to Mexican street snacks built from unripe mangoes and papayas and punched up with chile salt. The salad keeps well in the refrigerator for several days. Mr. Hernandez likes to eat it with a scoop of cottage cheese on the side, though dabs of goat cheese would do as well.

Vinaigrette:
1 shallot, finely chopped
Kosher salt
1 lemon
2 Tbsp. Katz's Sauvignon Blanc vinegar or other white wine vinegar
Salad and assembly:
2 lb. mixed heirloom cucumbers, sliced into1/4-inch thick wedges and rounds
1 English hothouse cucumber, halved lengthwise, sliced crosswise
Kosher salt
2 lb. yellow peaches, sliced into 3/4-inch thick wedges
4 oz. mild feta, crumbled
Freshly ground black pepper
Handful of basil leaves, torn if large
Handful of mint leaves, torn if large
1 lemon, halved

Steps:

  • Vinaigrette:
  • Place shallot in a small bowl and season with a big pinch of salt. Finely grate zest from lemon into bowl; cut lemon in half and squeeze in juice. Add vinegar and toss to combine. Let sit 10 minutes.
  • Salad and assembly:
  • Place cucumbers in a medium bowl and season with salt. Spoon half of vinaigrette over and toss gently to coat.
  • Place peaches in a serving bowl or on a platter and season with salt. Spoon remaining vinaigrette over and toss gently with your hands to coat.
  • Add cucumbers to peaches; toss gently again just to combine. Add feta; season with salt and pepper. Top salad with basil and mint and squeeze lemon over.

Tips:

  • To choose the best green peaches for your salad, look for fruit that is firm and has a slightly fuzzy skin. Avoid any peaches that are bruised or have soft spots.
  • If you can't find green peaches, you can substitute white peaches or nectarines.
  • For a sweeter salad, use ripe peaches. For a more tart salad, use unripe peaches.
  • If you don't have a spiralizer, you can use a sharp knife to thinly slice the peaches.
  • The lime dressing is a great way to add a bright, citrusy flavor to the salad. If you don't have any limes, you can use lemons or oranges instead.
  • The salad can be served immediately or chilled for later. It's a great side dish for grilled chicken or fish, or it can be served as a light lunch or dinner.

Conclusion:

This green peach salad with simple lime dressing is a refreshing and delicious way to enjoy the flavors of summer. The salad is easy to make and can be tailored to your own preferences. It's a great way to use up any extra green peaches you have on hand, and it's sure to be a hit at your next potluck or gathering.
