Yield Serves 4 to 6

Number Of Ingredients 13

Dill Dressing
3/4 cup olive oil
1/4 cup white wine vinegar
1/4 cup Dijon mustard
3/4 cup packed chopped fresh dill
Salad
2 10-ounce packages frozen petite green peas, thawed, drained or 3 pounds fresh peas, shelled
1 pound red potatoes, peeled, cut into 1/2-inch dice
12 ounces smoked ham (such as Black Forest), diced
1 15-ounce can black-eyed peas, rinsed, drained
1 large red bell pepper, diced
1 large yellow bell pepper, diced
1 cup diced red onion

Steps:

  • For Dressing:
  • Whisk first 3 ingredients together in small bowl. Stir in dill. Season generously with salt and pepper.
  • For Salad:
  • If using fresh peas, steam until tender, about 3 minutes. Do not precook frozen peas. Transfer peas to bowl. Steam potatoes over boiling water until tender, about 15 minutes. Cool completely. Add to peas. Add all remaining ingredients to peas. (Can be made 6 hours ahead. Cover and chill.) Toss salad with dressing. Season to taste with salt and pepper.

Tips:

  • Use fresh, high-quality ingredients: The fresher the ingredients, the tastier the salad will be. Look for vibrant green peas, crisp celery, and tender ham.
  • Don't overcook the peas: Peas should be cooked just until tender, not mushy. Overcooked peas will lose their鮮豔的顏色 and flavor.
  • Use a variety of textures: The combination of crunchy celery, tender peas, and chewy ham makes for a more interesting salad. You can also add other crunchy vegetables, such as radishes or carrots.
  • Use a flavorful dressing: The dressing is what brings all the flavors of the salad together. Use a dressing that is slightly tangy, sweet, and creamy. A simple vinaigrette or a creamy mayonnaise-based dressing are both good options.
  • Serve the salad immediately: Green pea and ham salad is best served immediately after it is made. The peas and celery will start to lose their鮮豔的顏色 and flavor the longer they sit.

Conclusion:

Green pea and ham salad is a classic summer dish that is easy to make and always a crowd-pleaser. With its鮮豔的顏色, delicious flavor, and crunchy texture, it's a perfect side dish for any summer gathering. So next time you're looking for a light and refreshing salad, give this recipe a try.
