1 tablespoon canola oil
1 medium onion, finely chopped
2 cups all-purpose flour
1 tablespoon minced fresh rosemary
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
1 cup buttermilk
2 tablespoons butter, melted
1/4 cup plus 2 tablespoons shredded sharp cheddar cheese, divided
1/4 cup each chopped pitted green and ripe olives

Steps:

  • Preheat oven to 350°. In a skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 2-3 minutes. Remove from heat., In a large bowl, whisk flour, rosemary, baking soda and salt. In another bowl, whisk eggs, buttermilk and melted butter until blended. Add to flour mixture; stir just until moistened. Fold in 1/4 cup cheese, olives and onion., Transfer to a greased 8x4-in. loaf pan. Bake 40 minutes. Sprinkle remaining cheese over top. Bake until a toothpick inserted in center comes out clean, 5-10 minutes longer. Cool in pan 10 minutes before removing to a wire rack to cool.

Number Of Ingredients 10

7 to 7 1/2 c all purpose flour
2 pkg active dry yeast or quick rise yeast
1/2 c finely chopped whole green onions (about 7)
1/3 c sugar
2 tsp salt
2 c water
1/3 c shortening, i use butter flavor or butter
2 eggs
1 egg, slightly beaten
1 Tbsp water

Steps:

  • 1. In a large mixer bowl, combine 3 cups flour, yeast, onion, sugar and salt, mix well. In a saucepan, heat 2 cups water and shortening until very warm (120-130 degrees; shortening does not need to melt). Add to flour mixture. Add 2 eggs. Blend at low speed until moistened; beat 3 minutes at medium speed. By hand, gradually stir in enough remaining flour to make a firm dough.
  • 2. Knead on floured surface, 5 to 8 minutes. Place in greased bowl, turning to grease top. Cover and let rise in warm place about 30 minutes (15 minutes for QUICK-RISE yeast).
  • 3. Punch down dough. Divide into 2 equal parts. On lightly floured surface, roll or pat each half to a 14 x 7-inch rectangle. Starting with the short side, roll up tightly, pressing dough into roll with each turn. Pinch edges and ends to seal. Place in greased 9x5-inch bread pans. Cover; let rise in a warm place about 40 minutes (20 minutes for quick rise).
  • 4. Oven: 375 degrees Combine 1 egg and 1 tbs water; brush loaves. The egg wash will make a shinny, crispy crust. With sharp knife, carefully make a slash 1/2 inch deep lengthwise down center of each loaf. Bake at 375 degrees for 35 to 40 minutes until golden brown. My oven: 30 min. Remove from pans; cool. Makes great sandwiches or sliced thick and grill for Texas toast.

1 (.25 ounce) package active dry yeast
2 tablespoons white sugar
1 ½ cups warm water (110 degrees F/45 degrees C)
2 teaspoons salt
2 tablespoons shortening
1 tablespoon minced onions
½ teaspoon dried oregano
3 ½ cups bread flour
½ onion
2 tablespoons butter, melted

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Stir salt, shortening, minced onions, oregano and 2 cups bread flour into yeast mixture. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Stir dough to deflate and place it into a lightly greased 9x5 inch loaf pan. Cover with a damp cloth and let rise until the top of the dough is within 1/2 inch of the top of the pan, about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • After loaf has risen, arrange onion slices on top of the loaf. Pour melted butter over the slices and bake in preheated oven for 35 to 40 minutes, or until golden brown. Remove from pan to cool on a wire rack.

3 teaspoons baking powder
1 teaspoon salt
2 tablespoons margarine
½ cup shredded sharp Cheddar cheese
½ cup finely diced onion
1 tablespoon margarine
1 egg
½ cup milk
½ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease one 8 inch round or one 8x8 inch square pan.
  • Combine flour, baking powder and salt, cut in 2 tablespoons of the butter until mixture is crumbly. Stir in 1/2 cup of the grated cheese. Make a well in the center of the mixture.
  • Fry the onion in 1 tablespoon of the butter or margarine until clear and golden. Set aside.
  • In a small bowl beat the egg and stir in the milk and the cooked onion. Pour egg mixture into the well in the flour mixture. Stir until just moistened. You will have a soft dough. Pat dough into the prepared pan. Sprinkle remaining 1/2 cup grated cheese over top.
  • Bake at 400 degrees F (205 degrees C) for 25 minutes. Serve hot. Makes about 6 servings.

1 cup sliced green onions
2 cups yellow cornmeal

1 1/2 cups buttermilk
2 large eggs, beaten to blend

Steps:

  • Preheat oven to 400°F. Lightly spray 13x9x2-inch metal baking pan with nonstick spray. Melt butter in medium skillet over medium heat. Add 1 cup sliced green onions and sauté until beginning to soften, about 3 minutes. Cool.

3 green onions, chopped
3 tablespoons grated romano cheese or 3 tablespoons parmesan cheese
fresh ground pepper, to taste
8 ounces French bread, split lengthwise (16 in.)

Steps:

  • Mix well all ingredients except bread.
  • Spread on cut surfaces of bread.
  • Place halves together and wrap in foil.
  • Bake at 400° for 10 minutes.
  • Open foil, separate halves and lay, cut side up, on a cookie sheet or pan.
  • Bake 7 minutes longer, or til bubbly and lightly browned around the edges.
  • Cut into pieces (I use kitchen scissors).
