This is quick and easy to make and oh, so delicious! Be prepared, it disappears quickly. I had to make a second batch just to get pictures!

1 pkg (8 oz) cream cheese or neufchatel, room temperature
3 oz (about half a jar) gr olives, drained - save juice - rough chopped
2-3 oz (2-3 tbsp) saved olive juice, more or less to taste

Steps:

  • 1. Whip the cream cheese, with electric mixer, until smooth.
  • 2. Add the olive juice a tablespoon at a time, mixing well after each addition. You want the cream cheese smooth, easy to spread, but not runny, so you may not use all of the reserved juice.
  • 3. Stir in olives. If you can, allow to stand for 15-20 minutes for flavors to blend. Serve with crackers (I like triskets)

6 oz cream cheese, softened
1/2 c mayonnaise
2 Tbsp liquid from salad olives
dash(es) ground pepper
1/2 c chopped pecans
1 c chopped green salad olives (the jar will say "salad olives." they are bits and pieces of green olives with pimentos.)

Steps:

  • 1. Combine the cream cheese and mayonnaise in a medium bowl and mix well. Add the liquid from the salad olives and the pepper and mix.
  • 2. Fold in the pecans and salad olives. May chill if not serving right away. When ready to serve, soften until it is spreadable.
  • 3. Serve on crackers or the bread of your choice. Great holiday spread or any other time of the year.

2/3 cup whole milk; more if needed
12 large oil-packed anchovy fillets
2 small cloves garlic, smashed
16 fresh cilantro sprigs, coarsely chopped
Freshly ground white pepper
1-1/2 cups vegetable oil
1-1/3 cups pitted brined green olives, rinsed if particularly salty, coarsely chopped
1 baguette, sliced 1/2 inch thick and toasted

Steps:

  • Purée the milk, anchovies, garlic, cilantro, and a pinch of pepper in a blender. With the motor running, slowly pour the oil through the feed hole in the blender cap. Scoop the spread into a serving bowl, cover with plastic, and refrigerate until ready to serve, up to 3 days. Just before serving, stir in the olives. The spread will thicken a bit more when the olives are added. If it thickens too much, thin it with a bit of milk. Serve with the toasted baguette slices.
