HOTDISH (TATER TOT CASSEROLE)
Hotdish is an easy, one-dish dinner often served in Minnesota at such large gatherings as family reunions, potlucks or church suppers. Don't be turned off by its humble appearance; the combination of cream of mushroom soup, corn, green beans, beef and a delightful crispy potato topping (the more taters, the better!) is universally likeable.

Steps:
- Preheat the oven to 350 degrees F.
- Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
- Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.
CHICKEN WITH GREEN OLIVES
This dish, which draws inspiration and ingredients from Moroccan cooking, is astonishing for its complexity, even in this simple form. It features sweet spices like cinnamon and ginger offset by garlic and paprika. But what makes it a real winner is the combination of those flavors with lemon and green olives, both of which have a mouth-puckering quality that, combined with the spice mix, is enchanting.

Steps:
- Put oil in deep skillet or casserole. Turn heat to medium-high and wait a minute, until oil is hot. Add chicken, skin-side down, and brown it well, rotating and turning pieces as necessary and sprinkling with salt and pepper as they cook; 10 to 15 minutes total. Turn heat to medium, remove chicken and pour off all but 2 tablespoons of fat.
- Add onion, ginger, cinnamon, garlic, cumin, paprika, 1/2 teaspoon or more of pepper and some salt and cook, stirring occasionally, for about 5 minutes, until onion softens. Add stock and raise heat to medium-high; return chicken to pan, skin-side up. Cook at a lively simmer for about 10 minutes.
- Add olives and continue to cook until chicken is done, another 10 to 15 minutes or so. Add lemon juice, then taste and adjust seasoning. Garnish and serve.

Steps:
- 1. Brown and drain ground beef and onion in a very large skillet or chicken fryer. Do NOT add salt to this, you will get plenty with the olive brine. While that's browning, make the ENTIRE bag of egg noodles according to directions and drain them.
- 2. Add all three cans of soup to the beef and stir until well blended. Now add in the whole jar of olives, BRINE INCLUDED.
- 3. Once that's all mixed together, fold in the cooked noodles and let simmer until the whole thing is hot. Eat with a slice of buttered bread
Tips:
- Sauté the vegetables first. This will help to bring out their flavor and prevent them from becoming watery.
- Use a variety of olives. This will add depth and complexity to the flavor of the dish.
- Don't overcook the noodles. They should be al dente, or slightly firm to the bite.
- Serve the dish immediately. This will prevent the noodles from becoming soggy.
Conclusion:
Green olive hot dish is a delicious and easy-to-make casserole that is perfect for a weeknight meal. It is also a great way to use up leftover vegetables and pasta. The combination of green olives, cheese, and vegetables makes this dish a flavorful and satisfying meal that the whole family will enjoy.
