Number Of Ingredients 8

1 package lemon jello
1 package lime jello
1 can (20 ounce size) pineapple
1 can (14 ounce size) evaporated milk
1 cup cottage cheese
1/2 cup mayonnaise or miracle whip
1/2 cup coarsely chopped pecans
1 pinch salt

Steps:

  • Drain pineapple juice into 2 cup glass measuring cup. Add enough water to the pineapple liquid to make 2 cups. Put into saucepan and heat liquid. Dissolve Jello in hot pineapple liquid. Put Jello into 1 1/2 quart container (the salad will ultimately be made in this container). Place in refrigerator to cool. Combine remaining ingredients and add to the Jello when the Jello becomes sticky. Combine well and place back in the refrigerator to set up. cook's notes We have had this salad every Thanksgiving and Christmas dinner that I can remember.

I don't know where Grandma got this recipe. It, and many like it, were popular back in the 1950's and 60's. It may have originated with the Jello Company. Every church supper and family gathering had a similar dish and everyone had their variations. This was one of my Grandma's favorites.

1 box (6 ounces) lime jello
1 can(s) (11 ounces) mandarin oranges, drained
1 can(s) (20 ounces) crushed pineapple well drained or fruit cocktail, drained
1 c small curd cottage cheese
1 container cool whip

Steps:

  • 1. Combine the dry lime jello, mandarin oranges, and pineapple or fruit cocktail in a bowl. Set the bowl in the refrigerator to set for about 2 hours. Remove the bowl from the fridge and stir in the cottage cheese and Cool Whip, stirring until well blended.
  • 2. Serve immediately, or store in the refrigerator until serving.

This recipe has been in our family forever. It can be made in many different variations. Cottage cheese instead of or in addition to cream cheese. Crushed pears or mandarin oranges in place of pineapple. The amount of ingredients seem to not matter much because I often forget how much jello or cream cheese, etc to use but it always tastes great. The only word of caution is NEVER use fresh pineapple in jello because it will not gel.

1 cup hot water
1 cup ice cube (optional)
1 (5 ounce) package Jello gelatin
1 (8 ounce) container Cool Whip
1 (10 ounce) can crushed pineapple, drained
1 (8 ounce) cream cheese, softened

Steps:

  • Dissolve jello in hot water. If in a hurry add ice cubes to set a litte faster.
  • Mix cream cheese and pineapple in large bowl.
  • Add jello.
  • Beat until blended.
  • Add Cool Whip or any whipped topping and beat for 2 minutes or well blended.
  • Pour into large glass pan or bowl and chill at least four hours. I've been known to use the freezer when in a hurry and it works out fine.

This salad has been a family favorite for over four generations, requested every Thanksgiving and Christmas. It is smooth and creamy with the crunch of pecans, and light green in color. It has a very unique flavor, and goes very quickly at our home. Any left over crushed pineapple and cottage cheese make a great snack for kids.

1 cup crushed pineapple, drained with juice reserved
1 cup water, or as needed
1 (3 ounce) package lime flavored Jell-O® mix
1 (3 ounce) package lemon flavored Jell-O® mix
1 cup mayonnaise
1 cup canned evaporated milk
1 cup small curd cottage cheese
½ cup coarsely chopped pecans
