1 pound tomatillos (8 medium)
¼ white onion
2 whole unwrapped garlic cloves
¼ to ½ jalapeño pepper
¼ cup Arbequina extra virgin Olive Oil from Spain, more for drizzling
½ English cucumber, chopped
½ cup packed cilantro
2 tablespoons lime juice
½ to 1 teaspoon sea salt
½ teaspoon honey or pure maple syrup
¼ cup plain whole milk Greek yogurt
Yogurt Drizzle
¼ cup plain whole milk Greek yogurt
1 teaspoon lime juice
2 teaspoons water
Pinch of sea salt
Garnishes
Arbequina extra virgin Olive Oil from Spain, for drizzling
Kernels from 1 ear of corn, lightly charred
1 cup finely diced cucumber
½ cup yellow cherry tomatoes, sliced in half

  • Preheat a grill to medium-high heat. On a plate or small baking sheet, toss the tomatillos, onion, garlic, and jalapeño with drizzles of Olive Oil from Spain and a few pinches of sea salt.
  • Wrap the garlic cloves in a piece of foil and place all the vegetables directly on the grill. Grill 4 to 5 minutes per side, or until the tomatillos are soft, charred, and just starting to burst, and the onion and jalapeño are charred and soft. Remove from the grill and unwrap the garlic. Let cool, then chill completely. (This step can be done in advance.)
  • In a blender, combine the chilled tomatillos, onion, garlic, ¼ of the jalapeño pepper, ¼ cup of Olive Oil from Spain, cucumber, cilantro, lime juice, ½ teaspoon salt, honey, and the yogurt. Blend until smooth. Season with more salt, if desired (I add ½ teaspoon). Taste and add the remaining jalapeño, if desired, for more spice. Chill the soup until ready to serve.
  • Yogurt drizzle: In a small bowl, mix the yogurt, lime juice, water, and a pinch of sea salt.

2 large cucumbers, peeled and halved lengthwise
½ (16 ounce) container sour cream
1 pinch white sugar
1 pinch cayenne pepper
½ bunch fresh mint leaves
3 tablespoons olive oil, or more to taste
1 tablespoon chopped hazelnuts
½ teaspoon salt, or to taste
½ teaspoon lemon juice, or more to taste

Steps:

  • Scrape cucumber seeds into a fine mesh sieve and press out as much liquid as possible. Reserve liquid and roughly chop cucumbers.
  • Combine cucumbers and cucumber liquid in the bowl of a food processor; process until smooth.
  • Whisk cucumber puree and sour cream together in a bowl. Season with sugar and cayenne. Cover and refrigerate.

100g bag baby spinach
2 garlic cloves
1 large cucumber , deseeded and chopped
½ green chilli , deseeded
½ small pack parsley
½ small pack basil
½ small pack mint
1 ripe avocado , stoned and peeled
4 spring onions , topped and tailed
200g natural yogurt
2 tbsp sherry vinegar
drizzle of extra virgin olive oil or rapeseed oil
handful pea shoots
edible flowers ice cubes, to serve (see tip, below)

Steps:

  • Put all the ingredients, except the oil, pea shoots and ice cubes, into a food processor with a good pinch of salt and pepper and blitz, adding enough water to get a soupy consistency. Taste, and add a little more vinegar and seasoning if necessary. Chill for up to 24 hrs, or at least 2 hrs.
  • To serve, divide between shallow soup bowls, float a few ice cubes in each bowl (see tip, below) and add a scattering of pea shoots and a drizzle of oil before serving.
