CREAMY GUACAMOLE

Creamy Guacamole image

This is a recipe handed to me by my Aunt Shawna. It's smooth, rich, creamy, definately not your average guacamole. Even my picky three-year-old daughter loves this. I usually eyeball ingredients when I make this, so the measurements are guesses. You can adjust to suit your taste! This guacamole is great served with tortilla chips, but I love to spread it on my sandwiches, too!

GREEN PEA GUACAMOLE

Green Pea Guacamole image

From a package of frozen green peas. Use the best quality green peas you can find. I changed the ingredients around a little. For less heat, use a mild pepper such as Anaheim.

Provided by COOKGIRl

Categories     Vegetable

Time 21m

Yield 1 3/4 cups

Number Of Ingredients 12

8 ounces frozen tiny peas
1 jalapeno peppers (seeded for less heat) or 1 serrano pepper, chopped (seeded for less heat)
3 tablespoons olive oil
1 teaspoon lime juice or 1 teaspoon lemon juice, approximately
1/8 teaspoon salt, to taste
fresh ground black pepper, to taste
1/4 teaspoon ground cumin
1 garlic clove
1 roma tomato, diced very small
1/2 cup red onion, minced
2 tablespoons low-fat sour cream (optional, my addition. Non-fat plain yogurt or tofu sour cream can be substituted.)
cilantro leaf (to garnish)

Steps:

  • Cook the frozen peas according to package directions. Drain and pat dry well to remove excess moisture.
  • Add the jalapeno pepper, olive oil, lemon juice to a blender and puree well. Next add the cooked green peas, salt, ground cumin and garlic.
  • Continue blending, scraping down sides of blender and mixture is smooth.
  • Transfer to serving bowl and stir in tomatoes, onion (and sour cream if desired for a smoother consistency). Taste and adjust seasoning; garnish with fresh cilantro sprigs.
  • Yield is estimated.

Tips:

- For the creamiest guacamole, use ripe avocados. Look for avocados that are dark green or black in color and slightly soft when pressed. - Use fresh lime juice for the best flavor. Bottled lime juice can be used in a pinch, but fresh is always better. - Add salt and pepper to taste. Guacamole should be slightly salty and slightly spicy. - Serve guacamole immediately or cover and refrigerate for up to 4 hours. Guacamole will brown over time, so it is best to serve it fresh. - Guacamole can be used as a dip for chips, spread on sandwiches or tacos, or used as a topping for salads or grilled meats. - If you want to make a spicy guacamole, add a chopped jalapeño pepper to the recipe. - If you want to make a chunky guacamole, mash the avocados with a fork instead of a food processor. - Guacamole is a versatile dish that can be customized to your liking. Experiment with different ingredients and flavors to find your perfect guacamole recipe.

Conclusion:

Guacamole is a delicious and healthy snack or appetizer that is perfect for any occasion. It is easy to make and can be customized to your liking. With its creamy texture and fresh flavor, guacamole is sure to please everyone at your next party or gathering. So next time you are looking for a quick and easy snack or appetizer, give guacamole a try. You won't be disappointed!
