My wife Sarah introduced me to Thai curry before we were married, and now I like to make it for her! Starting with store-bought Thai green curry paste-which contains a blend of lemongrass, ginger or galangal, herbs and aromatics-makes it quick enough for even a weeknight meal.

4 tablespoons peanut oil
1 pound 16/20-count shrimp, deveined and shells removed
1 small yellow onion, sliced thin
1 jalapeno, sliced thin
Kosher salt
2 to 3 tablespoons Thai green curry paste
1/2 cup chicken stock
One 15-ounce can coconut milk
2 teaspoons fish sauce
1 tablespoon palm sugar or light brown sugar
1 tablespoon fresh basil leaves, sliced thin
1 tablespoon fresh mint leaves, sliced thin
1/4 cup roasted salted peanuts, roughly chopped
Steamed rice, for serving

Steps:

  • Add 2 tablespoons oil to a large nonstick skillet over medium-high heat. Add the shrimp and par-cook by searing each side for about 1 minute, making sure to not crowd the skillet. Remove the shrimp to a plate and set aside. Return the skillet to the heat and add the remaining 2 tablespoons peanut oil along with the onions, jalapenos and a pinch of salt and cook until they start to brown, 5 to 6 minutes.
  • Add the green curry paste and stir to combine; cook until fragrant, about 30 seconds. Add the chicken stock to deglaze the skillet, stirring. Add the coconut milk, fish sauce and sugar and mix well. Bring to a simmer and continue to cook until it thickens, about 10 minutes.
  • Add the shrimp to the curry and cook until cooked through, 1 to 2 minutes. Ladle the curry into a serving bowl and garnish with the basil, mint and peanuts. Serve with steamed rice-a perfect combination.

4 large garlic cloves, minced (divided)
2 Tablespoons olive oil
3 boneless chicken breasts, cubed
(2) 13.5oz cans coconut milk (full fat)
(2) 4oz jars Thai Kitchen green curry paste
1/2 cup chicken broth
1 Tablespoons ground curry powder
2 Teaspoons ground cumin
1 large russet potato, cubed
3 large carrots, peeled and cut into 2 inch pieces (slice thick pieces in half)
1 cups sliced mushrooms
1 8oz can bamboo shoots, drained
1/2 cup fresh basil, roughly chopped
1 pound large shrimp
1 small yellow onion, quartered
salt and pepper

Steps:

  • Bring wok to medium heat and add olive oil and two cloves of garlic.
  • Stir constantly until garlic becomes fragrant.
  • Add chicken and season with salt and pepper.
  • Allow chicken to cook fully, stirring as needed.
  • Remove chicken and place on plate, set aside.
  • Add remaining garlic and stir until it becomes fragrant.
  • Add coconut milk, chicken broth, curry paste, curry powder and cumin.
  • Stir until well combined.
  • Add potato, carrot and bamboo shoots.
  • Let simmer 2 minutes.
  • Add basil and put the chicken back in.
  • Stir.
  • Add onion, mushrooms and shrimp.
  • Stir and then cover and let simmer for 5-7 minutes.
  • Taste and adjust any seasoning (curry powder, salt or pepper) to taste.
  • Serve as is or over cauliflower rice (or regular rice if not doing Whole30).

vegetable oil
1 (14 ounce) can coconut milk
1 ¾ cups water
6 cloves garlic, peeled
3 fresh jalapeno peppers, seeded and chopped
1 bunch cilantro
½ bunch green onions, white and light green parts only, chopped
vegetable oil
1 onion, sliced
6 slices fresh ginger
1 tablespoon red curry powder
2 tablespoons lime juice
2 tablespoons fish sauce
1 tablespoon brown sugar
2 cups 1-inch sweet potato chunks
1 ½ cups 1-inch eggplant chunks
1 bunch fresh Thai basil leaves, torn
salt and ground black pepper to taste

Steps:

  • Season chicken legs with salt on all sides.
  • Heat 1 tablespoon vegetable oil in skillet over medium heat; place chicken legs in the pan and cook until golden brown on each side, about 4 minutes per side. Remove chicken from skillet and set aside.
  • Place coconut milk, water, garlic, jalapeno peppers, cilantro, and green onion into a blender. Cover and puree until smooth. Set aside.
  • Heat 1 tablespoon vegetable oil in a Dutch oven over medium-high heat. Stir in sliced onion and ginger; cook until sizzling, 1 to 2 minutes.

  • Bring mixture to a boil and reduce heat to low. Cover and simmer, skimming off any fat, until chicken legs are tender, about 45 minutes. Remove chicken from the Dutch oven.

1 cup lime-flavored seltzer water
1 teaspoon ground ginger
1 teaspoon salt

2-1/2 cups sweetened shredded coconut
1-1/4 cups panko bread crumbs
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 boneless skinless chicken breasts (6 ounces each), cut into 3/4-inch cubes
Oil for deep-fat frying

MAUI MUSTARD:
1 can (8 ounces) crushed pineapple, well drained
1/2 cup red pepper jelly
3 tablespoons stone-ground mustard

12 ounces frozen peeled shrimp (optional)

1 deli chicken
3 whole roasted red peppers, sliced into thick pieces
1/2 cup fresh coriander, chopped (I sub parsley)
1 cup frozen peas
1 lime

  • Melt butter in a large saucepan over medium heat. Add onions and curry paste. Stir frequently until onions soften, 5 minutes. Meanwhile, place shrimp in a sieve. Rinse under cold running water until any ice crystals melt. Once onions are softened, stir in coconut milk and honey. Cook, stirring occasionally, 5 to 7 minutes.

1/2 lb jumbo shrimp, shelled,deveined
2 cups cooked chicken, skinless,2 inch pieces
1/2 teaspoon sea salt
1 teaspoon fresh ground black pepper
1 teaspoon turmeric
1 teaspoon lime juice, fresh (may substitute lemon)
3 sweet onions, sliced
3 cloves garlic, sliced
1/2 cup vegetable oil
1/2 inch fresh ginger, piece,cut coarsely
1/8 cup cilantro, fresh,chopped
2 green chili peppers, chopped (TO TASTE, USE RUBBER GLOVES TO CHOP CHILE)
2 whole dried hot red chili peppers
2 teaspoons black mustard seeds
2 -3 cups coconut milk (TO TASTE)
2 tablespoons vegetable oil

Steps:

  • Marinate shrimp with salt, pepper, turmeric and lime for 2 hours, covered in refrigerator.
  • Brown garlic and most of sliced onion in oil.
  • Remove vegetables and place along with ginger, cilantro, green chiles and the rest of the onion, into a food processor and blend into a paste.
  • Add red peppers and mustard seeds to pan used to brown garlic and onions.
  • Fry peppers and mustard seeds for 30 seconds.
  • Add onion paste and coconut milk to red peppers and mustard seeds.
  • Bring to a boil, reduce heat and simmer 30-45 minutes.
  • (until oil rises to the top) Saute shrimp in oil, until firm (4-7 minutes).
  • Add cooked shrimp and chicken to curry, heat thoroughly and serve over steamed rice.
