This is my original sandwich, and is still my favorite. It features sliced sour dough bread, sliced roast beef, whole Ortega chilies, med cheddar and pepper jack, and you must use very juicy ripe tomatoes.

2 slices sourdough bread
2 ounces roast beef
1 whole Ortega chile
1 slice cheddar cheese
4 slices ripe tomatoes
1 slice monterey jack pepper cheese
2 tablespoons butter

Steps:

  • Lightly toast sourdough in toaster. (This will keep the sandwich crisp).
  • Lay the two slices of sourdough on a bread board, side by side.
  • On one side, place cheddar cheese, Ortega chilies and roast beef.
  • On other side, place Jack cheese, and tomato slices.
  • Both sides are loaded from the bread up.
  • Close Sandwich and cook in 1T butter on each side. Cook very slowly, so all fillings are warm and cheese is melted.

8 (6 inch) corn tortillas
1 small onion, diced
1 pound processed cheese food, shredded
1 (4 ounce) can green chile peppers, chopped
1 (10.75 ounce) can condensed cream of chicken soup
½ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a medium sized casserole dish.
  • In a medium skillet over medium heat, cook the ground beef until evenly browned; drain fat.
  • Place half of the tortillas on the bottom of the prepared casserole dish and spread with half of the onion, cheese, ground beef and chiles. Layer with the remaining tortillas, onion, half of the remaining cheese, ground beef and chiles.
  • In a medium bowl, dilute the soup with milk and pour over the top of the casserole. Bake in the preheated oven for 30 minutes. Sprinkle with the remaining cheese and bake for another 5 to 10 minutes, or until the cheese has melted.

1 can (14-1/2 ounces) beef broth
2 cups green enchilada sauce
1 can (4 ounces) chopped green chilies
1/2 cup Mexican-style hot tomato sauce
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
12 flour tortillas (12 inches)
Optional toppings: shredded lettuce, chopped tomatoes, shredded cheddar cheese and sour cream

Steps:

  • Cut roast in half and place in a 3- or 4-qt. slow cooker. Add broth. Cover and cook on low for 8-9 hours or until meat is tender. , Remove beef. 2 teaspoons olive oil
1/2 cup diced onions
2 to 3 cloves garlic, minced
12 ounces sliced roast beef, sliced into strips
1 (14-ounce) can diced tomatoes
1 (4-ounce) can minced green chiles
2 tablespoons fresh lime juice
1 teaspoon ground cumin
2 tablespoons chopped fresh cilantro leaves
Salt and ground black pepper
4 sandwich rolls, sliced in 1/2
