2 slices whole wheat bread
3 thin slices of sharp white cheddar*
3 thin slices of medium cheddar*
1 Tbsp. onion, (finely chopped)
1 - 2 pods roasted, peeled, green chile pepper* - (chopped)
Cooked turkey or chicken* (chopped or thinnly sliced)
Cilantro, (minced)
1/2 avocado, (sliced)
butter

Steps:

  • Prep all of your ingredients for assembly.
  • Heat up a cast iron griddle or skillet over medium low heat.
  • Place a touch of butter on the hot griddle. It should sizzle and melt. Place one slice of bread on the griddle to soak up the butter. Repeat with the other slice of bread.
  • On top of one slice of bread place the sharp cheddar, onion, green chile, cilantro, and avocado. On the other slice place the mild cheddar and turkey. Top with the second slice of bread, buttered side out.
  • When the cheese starts to melt, place the bread with the turkey (buttered side out) on top of the other slice.
  • Turn the heat up to medium and grill the sandwich on both sides until the bread is toasted and cheese is melted.

1 cup shredded Colby-Monterey Jack cheese
1 cup shredded part-skim mozzarella cheese
1 can chopped green chilies, drained
2 tablespoons mayonnaise
1/4 teaspoon garlic powder
Dash seasoned salt
12 slices white bread
6 slices tomato
1/4 cup butter, melted

Steps:

  • In a small bowl, mix the first 7 ingredients until blended. Spread over half the bread slices. Top with tomato and remaining bread., Brush outsides of sandwiches with melted butter. 4 poblano or Anaheim chiles (or you may use canned whole green chiles)
1/4 cup white vinegar
1/2 red onion, thinly sliced
1/4 cup mayonnaise
1/4 cup Dijon mustard
8 slices rye bread
12 slices provolone
2 ripe tomatoes, sliced
8 slices Cheddar
1/2 cup (1 stick) butter, softened

Steps:

  • Begin by roasting the chiles over the flame on your stovetop (or under the broiler) until the skin is totally blackened (if using fresh). When the chiles are totally charred, throw them into a plastic bag. Seal and allow them to steam and cool.
  • Next, pour the white vinegar over the sliced red onion and let them sit awhile. This'll take away a little of the crazy onion flavor and leave them with a nice sweetness.
  • Finally, make the special sauce: equal amounts of mayonnaise and Dijon. It's the simple things in life!
  • When you're ready to make the sandwiches, scrape the blackened skin off the chiles. Scrape out the seeds, too, so you'll wind up with big pieces of roasted green chiles.
  • For each sandwich, generously spread 2 pieces of rye bread with the special sauce. Lay on 2 slices of provolone, 2 slices of tomato, 2 slices of Cheddar... a nice layer of roasted green chiles... a few red onion slices... and one more slice of provolone just to hold it all together.
  • Top with the other slice of bread and spread the outsides with a good amount of butter.
  • Toast the sandwich in a skillet over medium-low heat until the cheese is thoroughly melted inside. Be careful not to burn the bread!

4 ounces diced green chilies, drained
1/2 cup mayonnaise
1/2 lb deli roast beef, sliced
1/4 lb swiss cheese, sliced
8 slices sourdough bread
margarine

Steps:

  • Mix mayonnaise and green chilies. Set aside.
  • Heat non-stick skillet over medium heat.
  • Butter one side bread. Spread mayonnaise mixture on second side of bread. Place butter side of four slices of bread in pan. Add one slice of cheese to each and split meat between sandwiches. Add a second slice of cheese and the remaining bread, butter side out.
  • Grill until golden brown and cheese starts to melt. Flip and repeat.

4 boneless skinless chicken breast halves (4 ounces each)
2/3 cup reduced-sodium soy sauce
1/4 cup cider vinegar
2 tablespoon sugar
2 teaspoons canola oil
1 can (4 ounces) whole green chilies, drained and sliced lengthwise
4 slices Pepper Jack cheese or Monterey Jack cheese
4 kaiser or sandwich rolls, split

Steps:

  • Flatten chicken to 1/4-in. thickness. Place in a large resealable plastic bag. , In a bowl, combine the soy sauce, vinegar, sugar and oil. Set aside 1/4 cup for basting. Pour the remaining marinade over chicken; seal bag and turn to coat. Refrigerate for 30 minutes., Drain and discard marinade. Grill chicken, uncovered, over medium heat for 3 minutes. 2 tablespoons mayonnaise (I used light and it was fine)
1 tablespoon Dijon mustard
10 slices rye bread
5 slices swiss cheese
10 slices cooked beef
2 tablespoons butter, softened
salsa (optional)

Steps:

  • In a small bowl, combine chilies, mayo and mustard. Spread about 1 tablespoon on each side of each slice of bread.
  • Top five slices of bread with 1 slice of cheese, and 2 slices of beef. Cover with remaining bread.
  • Butter the outsides of the bread. In a skillet over medium heat, toast sandwiches for 4-5 minutes on each side or until bread is slightly browned and cheese is melted.
