Categories     Tacos & Burritos

Time 50m

Number Of Ingredients 13

6 4-oz frozen tamales, chicken or beef
10 oz frozen corn
4 oz green chilies, diced
3 green onions, chopped
1 c whipping cream
7 oz salsa verde
1 1/2 tsp chili powder
1 tsp ground cumin
1/4 tsp salt
1/4 tsp pepper
2 c monterey jack cheese, grated
avocado wedges, optional
salsa verde, optional

Steps:

  • 1. Preheat oven to 375°F.
  • 2. Place frozen tamales in microwave and cook on high until thawed, about 5 minutes.
  • 3. Remove husks.
  • 4. Cut tamales in half lengthwise.
  • 5. Place in single layer in 10-inch-diameter glass pie dish.
  • 6. Sprinkle with frozen corn, chilies, green onions and 1/2 cup cilantro.
  • 7. Whisk cream, salsa verde, chili powder, cumin, salt and pepper in medium bowl to blend; drizzle over casserole.
  • 8. Sprinkle grated cheese over top.
  • 9. Bake casserole until heated through and bubbling, about 35 minutes.
  • 10. Sprinkle with 1/2 cup cilantro.
  • 11. Serve with avocado and more salsa, if desired.

Tips:

  • Choose the right chiles. Poblano and Anaheim chiles are mild in heat, making them a good choice for those who don't like spicy food. For a spicier casserole, use Serrano or jalapeño chiles. Roasting the chiles intensifies their flavor, so be sure to do this before adding them to the casserole.
  • Use fresh corn. Fresh corn on the cob is best for this recipe, but frozen corn can also be used. If using frozen corn, thaw it before adding it to the casserole.
  • Don't overcook the casserole. The casserole is done when the corn is tender and the sauce has thickened. Overcooking will make the casserole dry and tough.
  • Serve the casserole hot. This casserole is best served hot out of the oven. It can be garnished with chopped cilantro, sour cream, or guacamole.

Conclusion:

This green chili and corn casserole is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover corn on the cob, and it can be easily tailored to your own taste preferences. Whether you like it mild or spicy, this casserole is sure to be a hit.
