3 cloves garlic, (minced)
2 tbsp diced green chilies
1 loaf ciabatta or French bread, (cut in half horizontally)
1 cup mozzarella cheese, (shredded)
1 cup pepper jack cheese, (shredded)
1 cup cheddar cheese, (shredded)

Steps:

  • Preheat oven 375°.
  • In a small bowl, mix butter, garlic, and diced green chilies together until combined.
  • Spread butter mixture on each half of bread loaf.
  • Place on a baking sheet and bake for 9-10 minutes.
  • Remove from oven and top with cheese and turn oven to broil.
  • Place bread back into the oven for 1-2 minutes or until cheese is melted and slightly browned.

½ cup butter (softened)
⅓ cup mayonnaise
1 cup cheddar cheese
4 ounces diced green chilies (canned with juices)

Steps:

  • Preheat oven to 500°. Line a baking sheet with parchment paper or a silicone baking mat (optional for easy clean up).
  • In a medium-sized bowl mix together well-softened butter (you can even use melted butter), mayo, canned green chilis (do not drain), and shredded or grated cheese until combined.
  • Cut french loaf in half, lengthwise, and spread the mixture evenly on each half. Place on a baking sheet with the cheese mixture sides facing up.
  • Bake for 5 minutes then turn to up broil until bubbly and golden brown.
  • Remove from oven. Carefully slice and enjoy!

1 (10 count) package refrigerated biscuits
1 tablespoon olive oil
1/4 teaspoon chili powder
3 tablespoons canned green chilies, drained
1/2 cup monterey jack cheese, blend

Steps:

  • Heat oven to 400°F.
  • Lightly grease a cookie sheet.
  • Separate the biscuits. Place one biscuit in the center and place the remaining 9 in a circle around it, edges slightly overlapping. Gently press them together. You should get about a ten inch circle(with pretty scalloped edges).
  • Combine olive oil (you could use melted butter) and chili powder. Brush over the biscuits. Sprinkle with chilies and cheese.
  • Bake for 12-15 minute until nice and golden brown.
  • To serve; pull them apart.
  • I have also used olive oil, chopped garlic, fresh minced rosemary and parmesan cheese.

1 pkg Active dry yeast
2/3 c Lukewarm apple juice or water (l05-ll5 degrees)
1 c Whole-wheat flour
1/4 c dry milk powder
1 tsp Salt
1 tsp Green chile powder, optional
1 Beaten egg
1 c Grated Cheddar Cheese
1 can(s) Chopped Green Chile, drained
1-1/4 c Whole-wheat flour or all purpose flour
1 Tbsp Olive Oil

Steps:

  • 1. Stir yeast & juice (or water) in a large bowl until dissolved.
  • 2. In another bowl, stir together the 1 cup flour, milk powder, salt and chile powder, if used. Stir in yeast mixture & beat with electric mixer until it forms a sticky mass, about 3 minutes. Cover & let rest for 1 hour. Beat in egg & additional flour until dough begins to come together.
  • 3. Plop onto a lightly floured counter & gradually knead in additional flour only as needed to prevent sticking and forms a soft dough. Too much flour will make your bread dry. Knead until soft & smooth, about 5 minutes. Knead in cheese & chile.
  • 4. Coat ball of dough with olive oil and place in bowl. Cover with damp cloth & let rise in a warm spot until doubled, about 1 hour.
  • 5. Reshape into a ball tucking in the ends & place on a greased cookie sheet. Let rise again until almost doubled, 15 to 30 minutes. Preheat oven 425 degrees & place baking pan filled with 1-1/2 inches of water on the lowest shelf of oven.
  • 6. Sprinkle loaf with additional grated cheese, if you wish and place in middle of oven. Immediately reduce temperature to 375 and bake 20-30 minutes until golden brown & bread sounds hollow when tapped with your fingers. Remove from oven & cool somewhat, for better slicing. It is great served warm but great at any temperature.
  • 7. DON't worry if you can't find the Green chile powder, it will work without it.
