1 tablespoon vegetable oil
1/2 cup chopped onion
1 tablespoon finely chopped garlic
1 can (10 1/2 oz) condensed cream of chicken soup
1 can (10 oz) Old El Paso™ green enchilada sauce
1/2 cup milk
2 cans (4.5 oz each) Old El Paso™ chopped green chiles
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon salt
18 (6-inch) yellow corn tortillas
3 cups shredded deli rotisserie chicken
1 can (15 oz) Progresso™ black beans, drained, rinsed
2 cups shredded Mexican cheese blend (8 oz)
1 cup chopped tomatoes
1/3 cup chopped fresh cilantro leaves
1/4 cup sliced green onions
Sour cream, if desired

Steps:

  • Heat oven to 350°F. Spray 3-quart oval or rectangular baking dish (13x9-inch) with cooking spray.
  • In 8-inch nonstick skillet, heat oil over medium heat. Add onion and garlic; cook 2 to 3 minutes or until tender. Reduce heat to medium-low; stir in condensed soup, enchilada sauce, milk, green chiles, chili powder, cumin and salt. Cook 2 to 3 minutes, stirring occasionally, until heated through.
  • Spread 1 cup sauce mixture in bottom of baking dish. Arrange 6 tortillas on top of sauce mixture. Top with 1 cup chicken, 1/2 cup beans, 1/2 cup cheese and 1 cup sauce. Repeat with another layer of 6 tortillas, 1 cup chicken, 1/2 cup beans, 1/2 cup cheese and 1 cup sauce. Top with remaining 6 tortillas, 1 cup chicken, 1/2 cup beans, 1 cup sauce and 1 cup cheese.
  • Bake 35 to 40 minutes or until hot and bubbly on edges (165°F in center). Let stand 20 minutes before serving. Serve with Toppings, as desired.
  • If making ahead to bake and serve at a later date: Line 13x9-inch (3-quart) baking dish with 2 layers of plastic wrap, leaving enough overhang to completely enclose assembled casserole. Allow sauce mixture to cool completely, covered, 30 to 45 minutes in refrigerator before assembling casserole. Assemble casserole in dish; cover with another layer of plastic wrap. Freeze unbaked casserole about 8 hours or until completely frozen. Transfer frozen casserole to labeled 2-gallon resealable freezer plastic bag. Remove air; seal and freeze up to three months. To bake: Spray 13x9-inch (3-quart) baking dish with cooking spray. Remove plastic wrap from casserole; place in baking dish. Cover tightly with foil; thaw completely in refrigerator, 24 to 48 hours. Heat oven to 350°F. Uncover; bake 45 to 55 minutes or until hot and bubbly on edges (165°F in center). Let stand 20 minutes before serving. Serve with Toppings, as desired.

4 skinless, boneless chicken breast halves
garlic salt to taste
18 (6 inch) corn tortillas, torn in half
1 (28 ounce) can green chile enchilada sauce
1 (16 ounce) package shredded Monterey Jack cheese
1 (8 ounce) container reduced fat sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Season chicken with garlic salt. Arrange in the prepared baking dish. Bake 45 minutes in the preheated oven, until no longer pink and juices run clear. Cool, shred, and set aside.

6 c chicken stock
6 large chicken breasts, boneless and skinless
2 large onions, diced
6 stalk(s) celery, chopped
4 oz cream cheese
1 can(s) cream of chicken soup
2 lg. can(s) diced green chiles
1/2 c green chile enchilada sauce
1 pkg flour tortillas, cut into strips
1 can(s) sliced olives
4 c mozzerella cheese, shredded
2 c cheddar cheese, shredded

Steps:

  • 1. In a large pot, add chicken stock and chicken breasts. Lightly salt. Boil chicken until cooked through and tender. Remove from stock and let cool. Reserve 1/2 to 3/4 cup of stock. Set aside.
  • 2. In a nonstick sauce pan, add some of the reserved stock, about 1/8 cup. Add the chopped celery and diced onions. Cook until tender. Add the diced greens chiles. Soften the cream cheese in the microwave. In a large bowl, add the chicken soup and softened Add the diced chicken, onion, celery and green chile mixture. Add 2 c. mozzerella and 1 cup cheddar. Stir until well combined.cream cheese. Dice the chicken into bite sized pieces.
  • 3. Cut the tortillas in strips. Spray a large baking dish with nonstick spray and line the bottom with a layer of tortilla strips. Spoon 1/3 of the chicken mixture over the tortillas, spread evenly. Cover with a thin layer of shredded cheddar & mozzerella. Add another layer of tortilla strips. Repeat until you have used all of the chicken mixture, ending with a layer of tortilla strips.
  • 4. Place casserole in oven, preheated to 350 degrees and bake for 25 minutes. Remove frome oven, cover with remaining cheddar/mozzy and sprinkle chopped olives over the casserole. Return to oven and bake an additional 10 minutes. Remove from oven, let sit for about 10 minutes, then serve.

1 teaspoon vegetable oil
1/2 cup chopped onion (1 medium)
1 fresh pablano chili pepper, seeded and chopped
1/4 cup snipped fresh cilantro
1 teaspoon sugar
1/2 teaspoon ground cumin
1/4 teaspoon salt
72 inches corn tortillas, halved
3 cups shredded cooked chicken breasts
3/4 cup mexican style shredded cheese

This casserole is even better the next day, that is if it even makes it overnight! ---you may omit the jalapeno pepper if desired, we like onions so I always use two and lots of fresh garlic, you can increase the green chiles to whatever amount you desire, and use as much shredded cheese and cooked chicken as desired, the amounts listed are only a guideline, this also works well with cooked turkey, prep time does not include cooking the chicken --- this is *very* good!

1 large onion, chopped
2 -3 tablespoons fresh minced garlic (or to taste)

3 large chicken breast with skin and bones
1 tsp better than bouillon chicken base paste
1 tsp ancho chili powder
1 Tbsp chili powder
1/2 tsp ground red pepper
1 tsp garlic powder
1 1/2 tsp onion powder
1 1/2 tsp cumin
1 1/2 tsp cilantro, fresh or freeze dried
1 small can(s) chopped green chiles
3/4 c chicken stock
1 large can(s) green chile enchilada sauce
1 jar(s) crema mexican cream (similar to sour cream)
2 c shredded white mexican quesadilla cheese
1 c mexican cotija grated cheese
1 pkg white corn tortillas

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9X13 casserole dish with cooking spray and set aside. Boil chicken in a large stock pot until tender and falling off of the bone. Remove chicken from pot and add 1 t. Better than Bouillon chicken paste to make a rich stock. Shred chicken and put in a large bowl. Add 3/4 c. chicken stock to the chicken. Add the spices and chopped green chiles and 1/2 c. green chile enchillada sauce. Stir well. Add 1 cup of shredded Quesadilla cheese, 1/3 jar of Crema Mexicana and 1/2 c. grated Cotija cheese to chicken mixture and stir well to incorporate all ingredients. Set aside.
  • 2. Cut corn tortillas into strips and set aside. In your sprayed casserole dish pour just enough green chili sauce to coat bottom. Add a layer of chicken mixture then drizzle with more Crema and sprinkle with some of the grated cheese and quesadilla cheese. Cover this layer with strips of tortillas. Repeat until you have about 3 layers ending with a layer of chicken mixture topped with green chile sauce and cheeses. Then drizzled with Crema. Cover with foil and bake for 1 hour to 1 hour 15 minutes or until hot and bubbly. Remove foil and bake for an additional 5 minutes.
  • 3. Remove from oven and let rest for 10 minutes before serving. It's great with no toppings at all or you can top with green salsa verde, black olives, sour cream, shredded lettuce and chopped tomatoes if you wish.
