2 pounds ground beef
1 teaspoon salt
1/2 teaspoon pepper
6 slices slices sharp cheddar cheese
6 hamburger buns, split and toasted

Steps:

  • Grill peppers, covered, over high heat until all sides are blistered and blackened, 8-10 minutes, turning as needed. Immediately place peppers in a small bowl; let stand, covered, 20 minutes. Reduce grill temperature to medium heat., Meanwhile, in a large bowl, combine beef, salt and pepper; mix lightly but thoroughly. 2 large Cubanelle peppers
2 large poblano chile peppers
1 tablespoon vegetable oil, plus more for the grill
1 small onion, diced
Kosher salt
3 cloves garlic, minced
1/2 teaspoon ground cumin
2 tablespoons white vinegar
3 pounds ground beef chuck
Freshly ground pepper
8 slices colby-jack cheese
8 hamburger buns
Mayonnaise, barbecue sauce, lettuce and sliced sweet onion, for topping

Steps:

  • Preheat a grill to medium high. Grill the serrano, Cubanelle and poblano peppers, turning, until charred all over, 6 minutes for the serrano, 8 minutes for the Cubanelle, and 10 to 12 minutes for the poblano. Transfer to a large bowl, cover with plastic wrap and let steam 10 minutes. Peel, seed and chop all the peppers.
  • Heat the vegetable oil in a medium saucepan over medium-high heat. Add the onion, season with salt and cook, stirring, until browned, 5 to 6 minutes. Add the garlic and cumin and cook, stirring, until the cumin is toasted, about 1 minute. Add 1 cup water, the grilled peppers and 1/2 teaspoon salt. Simmer over medium heat until most of the liquid has cooked off, 8 to 10 minutes. Stir in the vinegar and season with salt.
  • Form the ground beef into 8 patties, about 4 inches wide and 1/2 inch thick; season with salt and pepper. Oil the grill grates. Extra-virgin olive oil
Kosher salt and freshly cracked black pepper
1/2 teaspoon ground cumin
Juice of 1 lime
Canola oil, for grilling
2 pounds ground brisket (80/20 blend)
Kosher salt and freshly cracked black pepper
4 large brioche hamburger buns
2 tablespoons butter, melted
8 white Cheddar slices
4 butter lettuce leaves
1 Vidalia onion, thickly sliced
1 large heirloom tomato, thickly sliced

  • Preheat the broiler to high.

  • Form the ground brisket into four 8-ounce patties about 1/2-inch thick. Make them slightly bigger in diameter than your buns, as they shrink when they cook. Also, add a dimple in the center as the burger puffs up in the middle when cooked, and this will ensure a flat, even patty. Sprinkle both sides with salt and pepper, and then place on the hot part of the grill. Cook for 5 to 7 minutes on one side, then flip the patties and top with the cheese. 3 large white onions, peeled
6 garlic cloves, peeled
1 tablespoon fresh epazote
1/2 tablespoon dried Mexican oregano
1/2 cup grapeseed oil
1 cup water
Oil, for brushing grill
4 hamburger buns
1 pound Asadero cheese, sliced 1/4-inch thick
1 pound mozzarella cheese, sliced 1/4-inch thick

Steps:

  • Preheat the grill to high.
  • In a large bowl, mix the ground beef with the salt and pepper and set aside.
  • Next, brush the green chiles with oil and place them on the hottest part of the grill. Cook the chiles until they are charred on all sides about 5 minutes. Then remove them from the grill and put them in a bowl of ice water to cool. Remove the chiles from the ice water and carefully peel off the charred skin. Put the hamburger buns on the grill until lightly toasted. Just before removing the burgers, top them with the cheese and chile mixture.
