Categories     Vegetable

Time 12m

Yield 4 serving(s)

Number Of Ingredients 9

1 tablespoon olive oil
1 garlic clove (minced)
1/2 cup onion (diced)
3 roma tomatoes (diced and seeded)
1 (4 ounce) can black olives, sliced (drained)
1/4 teaspoon oregano
2 (10 ounce) packages French style green beans (thawed & drained)
salt and pepper
5 ounces feta cheese (crumbled)

Steps:

  • Saute onion and garlic in olive oil for a minute or so, be careful not to burn.
  • Stir in diced tomaotes, olives & oregano; cook over med. heat for 3 minute.
  • Add drained green beans, simmer for another 5 minutes.
  • Right before serving, crumbled feta cheese on top.

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green in color and snap easily when you bend them. Avoid beans that are wilted, bruised, or have brown spots.
  • Trim the green beans: Remove the tough ends of the green beans by snapping them off or using a sharp knife. You can also string the beans if desired, which involves removing the fibrous strings that run along the sides of the beans.
  • Use ripe, flavorful tomatoes: The tomatoes in this recipe add a burst of sweetness and acidity. Choose ripe, juicy tomatoes that are in season. If you can't find fresh tomatoes, you can use canned or diced tomatoes.
  • Don't overcook the green beans: Green beans should be cooked until they are tender-crisp, but not mushy. Overcooked green beans will lose their vibrant color and flavor.
  • Season the green beans well: Salt, pepper, and garlic powder are all essential seasonings for this recipe. You can also add other herbs and spices to taste, such as oregano, basil, or thyme.

Conclusion:

This simple and delicious recipe for green beans with tomato feta is a great way to enjoy this versatile vegetable. The green beans are cooked until tender-crisp and then tossed with a flavorful mixture of tomatoes, feta, and herbs. This dish is perfect for a summer side dish or as part of a main meal. It's also a great way to get your kids to eat their vegetables!
