Yield Makes 8 servings

Number Of Ingredients 5

1 1/2 lb green beans, trimmed and cut diagonally into 1/2-inch pieces
1/4 cup pine nuts, toasted
2 tablespoons finely chopped fresh flat-leaf parsley
1 1/2 teaspoons finely grated fresh lemon zest
4 teaspoons extra-virgin olive oil

Steps:

  • Cook beans in a 4-quart saucepan of boiling salted water until just tender, about 5 minutes, then drain well in a colander. Transfer to a bowl and toss with nuts, parsley, zest, oil, and salt and pepper to taste.

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green and snap easily when you bend them. Avoid beans that are limp or have brown spots.
  • Trim the green beans: Cut off the ends of the beans, where the stem was attached. You can also trim the strings from the beans if they are tough.
  • Blanch the green beans: Blanching the beans helps to preserve their color and nutrients. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately transfer the beans to a bowl of ice water to stop the cooking process.
  • Toast the pine nuts: Toasting the pine nuts brings out their flavor. To toast the pine nuts, heat a small skillet over medium heat. Add the pine nuts and cook, stirring constantly, until they are golden brown and fragrant.
  • Make the vinaigrette: The vinaigrette is a simple dressing that adds flavor to the green beans. To make the vinaigrette, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  • Combine the ingredients: In a large bowl, combine the blanched green beans, toasted pine nuts, vinaigrette, and crumbled goat cheese. Toss to coat.
  • Serve: Serve the green beans warm or at room temperature. Enjoy!

Conclusion:

This recipe for green beans with toasted pine nuts is a delicious and healthy side dish that is perfect for any occasion. The green beans are blanched to preserve their color and nutrients, and the toasted pine nuts add a nutty flavor. The vinaigrette is a simple dressing that adds flavor to the green beans. This dish is easy to make and can be served warm or at room temperature.
