Time 35m

Yield 6 to 8 servings

Number Of Ingredients 9

2 1/2 pounds green beans, trimmed
Kosher salt
1/2 pound bacon, roughly chopped
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper

Steps:

  • Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.

Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.

GREEN BEANS WITH SAVORY AND BACON

Categories     turkey     Side     Low Fat     Quick & Easy     Green Bean     Self

Yield Makes 4 servings

Number Of Ingredients 5

salt
1 lb fresh green beans, trimmed and cut into 2-inch lengths
2 oz regular or turkey bacon, finely diced
2 cloves garlic, peeled and minced
2 tbsp chopped fresh savory (or fresh oregano)

Steps:

  • Bring a large pot of water to a boil; add salt. Drop beans in water and cook 3 minutes, then drain in colander. In a large skillet, cook bacon over medium-low heat, stirring until it renders most of its fat and is nearly crisp. Pour off all but 1 tbsp fat. Add garlic to skillet and cook over medium-low heat for 30 seconds, stirring constantly. Raise heat, add beans and savory and toss 1 to 2 minutes to blend flavors. Season with pepper and salt, if needed.

Tips:

  • For the best flavor, use fresh green beans. If you're using frozen beans, thaw them completely before cooking.
  • Don't overcrowd the pan when cooking the green beans. This will prevent them from cooking evenly.
  • Cook the green beans until they are tender-crisp. You don't want them to be mushy.
  • Add the bacon and savory at the end of cooking to prevent them from overcooking.
  • Season the green beans with salt and pepper to taste.
  • Serve the green beans immediately. They are best when they are hot and fresh.

Conclusion:

Green beans with savory and bacon is a simple but delicious dish that is perfect for a weeknight meal. It's also a great way to use up leftover bacon. The combination of green beans, bacon, and savory is a classic for a reason. The green beans are tender and flavorful, the bacon adds a smoky richness, and the savory adds a touch of umami. This dish is sure to please everyone at the table.
