ITALIAN GREEN BEANS

When I was first married, I wasn't a great cook. Twenty years later, I have many dishes I'm proud of, including this family favorite. Basil, oregano and Romano cheese give these beans their Italian accent. I serve them with broiled steak, pork roast, lamb chops or pork chops. -Andrea Ibzag, Gordon, Wisconsin

Provided by Alia55

Categories     Vegetable

Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

2 teaspoons olive oil
1/4 cup mild onion, diced
2 garlic cloves, minced
3 cups fresh green beans, trimmed, and cut into 1-inch lengths
1/4 cup chicken broth
1 tomatoes, diced
1 tablespoon oregano, minced
1 tablespoon parsley, chopped fine
salt
pepper

Steps:

  • Heat the oil in a heavy skillet over medium heat.
  • Add the onion and garlic and sauté for 3 minutes.
  • Add the green beans and broth, cover and let simmer for 5 minutes.
  • Add the diced tomato, cover and steam for 1-2 minutes, then add the oregano, parsley, salt and pepper and steam for another minute.

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green in color and snap easily when bent. Avoid beans that are limp or have brown spots.
  • Trim the beans before cooking: Remove the ends of the beans and any strings that may be present.
  • Cook the beans until they are tender-crisp: Overcooking will make the beans mushy, so cook them just until they are tender enough to pierce with a fork but still have a slight bite to them.
  • Use fresh oregano: Fresh oregano has a more intense flavor than dried oregano, so it is preferable in this recipe. If you only have dried oregano on hand, use about half the amount called for in the recipe.
  • Season the beans to taste: Add salt, pepper, and garlic powder to taste. You can also add other seasonings, such as paprika, chili powder, or cumin, to taste.
  • Serve the beans immediately: Green beans are best served immediately after cooking, while they are still hot and tender.

Conclusion:

Green beans with oregano is a simple but flavorful side dish that can be enjoyed as part of a healthy meal. The beans are tender and crisp, with a bright, herbaceous flavor from the oregano. This dish is also very easy to make, and it can be ready in just a few minutes. So next time you're looking for a quick and easy side dish, give green beans with oregano a try. You won't be disappointed!
