I found this recipe and had to share, it's from the November 2011 - Costco Connection-Cooks illustrated.com I love green beans!

3/4 c pecans, chopped coarse
3 Tbsp unsalted butter
2 Tbsp maple syrup
salt and pepper
2 shallots, minced
2/3 tsp grated orange zest
pinch of cayenne pepper
2 tsp all purpose flour
1 1/2 lb green beans, trimmed
2/3 c low-sodium chicken broth
1/3 c orange juice
1 tsp minced fresh sage

Steps:

  • 1. Toast pecans in 12-inch nonstick skillet over medium-high heat, stirring occasionally, until fragrant, about 3 minutes.
  • 2. Off heat, stir in 1 tablespoon butter, maple syrup and 1/8 teaspoon salt. Return skillet to medium heat and cook, stirring constantly, until nuts are dry and glossy, about 45 seconds;transfer to plate and set aside.
  • 3. Wipe out skillet. melt remaining 2 tablespoons butter in skillet over medium heat.
  • 4. Add shallots, orange zest and cayenne, and cook, stirring occasionally, until shallots are softened, about 2 minutes
  • 5. Stir in flour until combined, then add green beans.
  • 6. Add chicken broth, orange juice and sage. Increase heat to medium-high, cover and cook until beans are crisp-tender, about 4 minutes
  • 7. Uncover and cook, stirring occasionally, until beans are tender and sauce has thickened slightly, about 4 minutes. Off heat, season with salt and pepper to taste. Transfer to serving dish, sprinkle with pecans and serve.

1 cup chopped pecans
2 tablespoons maple syrup
1/8 teaspoon salt
BEANS:
1/4 cup finely chopped shallots
2 tablespoons butter
2 teaspoons all-purpose flour
1/2 teaspoon grated orange zest
Dash cayenne pepper
1-1/2 pounds fresh green beans, trimmed
2/3 cup reduced-sodium chicken broth
1/3 cup orange juice
1 teaspoon fresh sage or 1/4 teaspoon dried sage leaves
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small heavy skillet, melt butter. Add pecans; cook over medium heat until toasted, about 4 minutes. Add syrup and salt; cook and stir for 2-3 minutes or until pecans are glossy. Spread on foil to cool., Meanwhile, in a large skillet, saute shallots in butter until tender; stir in the flour, orange zest and cayenne. Add the remaining ingredients; cover and cook for 5 minutes. Uncover; cook and stir 4-5 minutes longer or until beans are crisp-tender. Transfer to a serving bowl. Sprinkle with pecans.

1 1/2 pounds haricots verts or other thin green beans, trimmed
1/4 cup olive oil
1/2 cup chopped pecans
1 clove garlic, very finely chopped
1 tablespoon chopped fresh basil
Coarse salt and freshly ground black pepper

Steps:

  • Prepare an ice-water bath by filling a large bowl with ice and water.
  • Bring a large pot of salted water to a rolling boil over high heat. Add the beans and cook until crisp-tender, about 3 minutes. Drain well in a colander, then set the colander with beans in the ice-water bath (to set the color and stop the cooking), making sure the beans are submerged.
