FRENCH GREEN BEANS SAUTéED WITH MUSHROOMS AND ALMONDS

French Green Beans Sautéed With Mushrooms and Almonds image

I created this Asian-inspired dish last night. It is permissible for phase one of the South Beach Diet and we LOVED it. I used frozen french beans from Trader Joe's, but fresh beans would be wonderful! Amounts are highly approximated; I didn't measure when making this, but this is pretty similar to what I did. (If using fresh beans, you'd probably want to blanch them in boiling water and then plunge in ice water, and *then* add to the pan.)

Time 35m

Yield 2 serving(s)

Number Of Ingredients 6

1 tablespoon olive oil
2 -3 garlic cloves
6 large button mushrooms, sliced
1/2-3/4 cup whole almond (more or less to taste and to fit your dieting goals)
1/2 lb frozen French-cut green beans (like those found at Trader Joe's but any would work, including fresh, also, you may want to add more)
soy sauce, to taste

Steps:

  • Heat oil over medium heat.
  • Sauté garlic until soft, being careful not to let it burn.
  • Add sliced mushrooms and sauté until they look fairly cooked and shiny (about 5 minutes).
  • Add almonds and sauté for a couple more minutes.
  • Finally, add frozen green beans and splash of soy sauce.
  • Stir frequently until beans are just cooked and, of course, no longer frozen.
  • If not on the south beach diet or watching sugar intake, you could add oyster sauce or other Asian condiment to the mixture.

GREEN BEANS WITH TOASTED ALMONDS

Green Beans with Toasted Almonds image

My husband loves green beans, and mushrooms, and toasted almonds, so I thought I'd try to combine all three! I've made this for a couple different family get-togethers, and it goes over very well! I don't know measured portions, as I just put as much as I want and season to taste!

Time 11m

Yield 1 Side Dish

Number Of Ingredients 6

frozen green beans (or you could use fresh)
fresh mushrooms
slivered almonds
garlic pepper seasoning
2 tablespoons butter, approx
other seasoning, to your liking (sometimes I add Tabasco for a kick)

Steps:

  • Melt 1/2 of the butter on stove, add slivered almonds and continuously stir to toast.
  • They are done when their color has changed slightly.
  • Remove the almonds.
  • Melt the rest of the butter, and saute mushrooms with garlic pepper and other seasonings as you wish.
  • Meanwhile, cook green beans (I use frozen, so I cook them in the microwave while I'm sauteing).
  • Once the mushrooms are done, turn them down to low until the green beans are done.
  • Mix together the green beans, mushrooms, and slivered almonds, reserving a tablespoon or so to sprinkle on the top before serving.

Tips:

  • Prep your ingredients: Before you start cooking, wash and trim the green beans, slice the mushrooms, and toast the almonds. This will save you time and ensure that everything cooks evenly.
  • Use fresh, high-quality ingredients: The better the ingredients, the better the dish will taste. Look for fresh, crisp green beans, meaty mushrooms, and flavorful almonds.
  • Don't overcook the green beans: Green beans should be cooked until they are tender-crisp, but not mushy. Overcooked green beans will lose their vibrant color and flavor.
  • Add the toasted almonds at the end: Toasting the almonds brings out their nutty flavor and adds a nice crunch to the dish. Adding them at the end will prevent them from becoming soggy.
  • Season to taste: A good green bean dish should be well-seasoned with salt, pepper, and garlic powder. You can also add other herbs and spices to your liking.

Conclusion:

This green beans with mushrooms and toasted almonds recipe is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a quick and easy side dish, give this recipe a try. You won't be disappointed!
