12 to 16 ounces fresh green beans, trimmed
3 tablespoons butter
2 cloves garlic, grated on a rasp grater or finely minced
Zest of 1 lemon plus 2 teaspoons fresh lemon juice
1/4 cup slivered almonds

Steps:

  • Bring a pot of salted water to a boil. Prepare an ice bath. Blanch the green beans briefly in the boiling water, then transfer to the ice bath to stop the cooking process. Drain and set aside.

The recipe calls for butter. Please do not sub margarine! The original recipe called for dried marjoram leaves. Not having those I used Penzeys Bouquet Garni with rewarding results.

3 tablespoons butter
1 teaspoon lemon zest, grated
1 teaspoon dried marjoram
1/4 teaspoon salt
