- 1. Boil the green beans in a medium pot of salted water for about 3-4 minutes, or until just tender. Drain.
- 2. Heat a medium-sized skillet over medium heat and add 1/4 t. of the olive oil. Once it's hot, add the prosciutto and cook until crispy - approx. 2-4 minutes. Set aside to drain on paper towels.
- 3. Quickly wipe out the skillet, return it to medium heat, and add 1 t. of olive oil to heat. Now you can add the green beans, garlic, sage, salt and pepper to taste. Cook until the beans begin to brown up a bit.
- 4. Add your roasted pine nuts, prosciutto, and lemon zest and stir together. As you serve, you can squeeze a bit of fresh lemon juice over it. Enjoy!
