Tips:

  • Choose fresh, tender green beans. Look for beans that are bright green and snap easily when you bend them. Avoid beans that are limp or have brown spots.
  • Trim the green beans before cooking. Cut off the ends of the beans, and remove any strings that run along the sides.
  • Cook the green beans until they are tender-crisp. You can boil, steam, or sauté the beans. If you are boiling the beans, cook them for 3-5 minutes, or until they are bright green and tender. If you are steaming the beans, cook them for 5-7 minutes, or until they are tender-crisp. If you are sautéing the beans, cook them for 5-7 minutes, or until they are tender-crisp and slightly browned.
  • Make the yellow pepper butter before cooking the green beans. This will give the butter time to infuse with the flavor of the peppers.
  • Use unsalted butter to make the yellow pepper butter. This will allow you to control the amount of salt in the dish.
  • Add garlic and shallots to the yellow pepper butter for extra flavor.
  • Serve the green beans with the yellow pepper butter immediately. The butter will melt over the beans and add a delicious, creamy flavor.

Conclusion:

Green beans in yellow pepper butter is a simple but flavorful dish that is perfect for a weeknight meal. The green beans are tender-crisp and the yellow pepper butter is rich and creamy. This dish is also a good source of vitamins and minerals, including vitamin C, vitamin K, and potassium.
