Sauteed green beans with onion - one of my favorite fresh green bean recipes. Also good with bacon or slivered almonds.

1 pound fresh green beans, trimmed
1 pinch salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 shallot, chopped
½ teaspoon garlic salt
½ teaspoon soy sauce
salt and ground black pepper to taste

Steps:

  • Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
  • Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

1 pkg (16 oz.) frozen french-cut green beans or
2 can(s) french-cut or regular-cut green beans
2 Tbsp dry onion soup mix

Steps:

  • 1. If using frozen beans, in a medium saucepan add enough water to cover bottom of pan. Add 2 tablespoons onion soup mx. Bring to a boil; add package of green beans. Stir and cover. Reduce heat to a low simmer and simmer gently for 7-9 minutes or until heated through.
  • 2. If using canned green beans, pour enough liquid from the can/s to cover the bottom of the pan. Proceed as directed above, but drain the remaining green beans before adding.
  • 3. When heated through, remove from heat, stir and serve. A sprinkling of grated Parmesan cheese may be added for garnish.

2 lb green beans (either frozen or fresh) not canned
2 Tbsp butter
2 Tbsp flour
1/2 c diced onion
1/4 c apple cider vinegar
1 c water
2 tsp sugar
1 Tbsp fresh chopped dill

Steps:

  • 1. Cook beans in water until tender crisp, not soft. Drain.
  • 2. Melt butter, add onions and saute until limp. Add chopped dill. Add flour and stir well to make the roux. Add one cup of water, sugar and vinegar and stir while the sauce thickens.
  • 3. Add drained beans and mix. If too thick, add a little more water. ( I found i didnt have to add additional water)
  • 4. This is a forgiving recipe. I had made it, and we talked for a while, and it reheated over a low temp just fine.

1 small cube chicken bouillon
2/3 cup chicken broth

4 to 6 cloves garlic, minced
2 scallions, chopped

Steps:

  • Mix soy sauce, sugar and Sherry and set aside.
  • In a large saucepan, dissolve bouillon in the chicken broth over high heat. Add the beans, and simmer until nearly all liquid has evaporated, about 5 to 8 minutes, stirring constantly. Drain the beans and set aside.
  • In a wok or skillet, heat the oil and butter. Add garlic and scallions and stir-fry for about 30 seconds, or until just softened. Add the beans and toss until coated. Sprinkle soy-sugar-Sherry mix over beans and stir-fry for 1 minute. Serve hot.

6 medium onions (about 2 1/2 pounds), peeled, each cut vertically through root end into 12 to 14 wedges
6 tablespoons (3/4 stick) butter
2 cups canned low-salt chicken broth
3 tablespoons sugar
2 tablespoons red wine vinegar
3 pounds slender green beans, ends trimmed

Steps:

  • Preheat oven to 450°F. Spray 2 heavy large baking sheets with vegetable oil spray. Arrange onions in single layer on prepared sheets.
  • Dot onions with 4 tablespoons butter, dividing equally. Season with salt and pepper. Bake until onions are dark brown on bottom, about 35 minutes.
  • Meanwhile, boil broth in heavy large skillet over high heat until reduced to 1/2 cup, about 6 minutes. Add sugar and vinegar and whisk until sugar dissolves and mixture comes to boil.

1 lb frozen small whole onions
2 teaspoons sugar
1/3 cup cider vinegar
1 tablespoon fresh rosemary or 1 1/2 dried rosemary
1/2 teaspoon salt

1 1/2 cups chicken broth

  • Bring a large pot of lightly salted water to boil. Add beans; cook 4 minutes or until crisp tender. Drain in a colander; chill under running cold water. Pat dry with paper towels.
  • To make the sauce; while water comes to a boil melt butter in a large nonstick skillet over medium high heat. Add frozen onions toss to coat. Sprinkle with sugar and cook, shaking pan often, 8-10 minutes until onions are lightly golden and liquid has evaporated.

  • To serve: bring 1/2 cup water to boil in a large pot or skillet. Add beans, return to a boil, reduce heat and simmer, stirring occasionally, 4 minutes or until hot and water evaporates. Add sauce; cook and stir until heated through. Serve garnished with rosemary if desired.
