CREOLE GREEN BEANS

Creole Green Beans image

Even though our children are grown, my husband and I remain busy. So we rely on speedy recipes that call for everyday ingredients. This peppery treatment really wakes up green beans. It makes enough that we have leftovers, which is helpful since our schedules sometimes keep us from eating together. -Sue Kuhn, Dublin, Ohio

Found at a cooking-by-country (or region) website, just reading this recipe took me back decades to a time growing up when we would pick beans from the garden & cook them until soft w/a combo of onion w/ham or bacon. I never cared when the main-course was as long as I could have a HUGE plate of those green beans. If it was my choice to make, I would definitely dbl this recipe! Enjoy!

Time 30m

Number Of Ingredients 11

6 slice bacon
3/4 c onions, chopped
1/2 c green pepper, chopped
2 Tbsp flour
2 Tbsp brown sugar
1 Tbsp worcestershire sauce
1/2 tsp salt
1/4 tsp pepper
1/8 tsp dry mustard
16 oz can peeled tomatoes
1 can(s) green beans, french style

Steps:

  • 1. Cook bacon until crisp and remove to paper toweling. Save 3T fat in skillet.
  • 2. Add onion and green pepper and cook until tender. Blend in spices.
  • 3. Add tomatoes with juice. Cook and stir, breaking up tomatoes, until mixture thickens. Add green beans and heat through.
  • 4. Sprinkle with reserved bacon to serve.

Tips:

  • Choose fresh, tender green beans. Look for beans that are bright green and snap easily when you bend them.
  • Trim the green beans before cooking. Remove the tough ends of the beans and any strings that run along the sides.
  • Cook the green beans in a flavorful liquid. This could be water, broth, or even a combination of the two. Adding some aromatics, such as garlic, onion, or celery, can also help to enhance the flavor.
  • Don't overcook the green beans. They should be tender but still have a slight crunch to them.
  • Season the green beans to taste. Salt, pepper, and garlic powder are all good options.
  • Serve the green beans immediately. They can be enjoyed as a side dish or as part of a main course.

Conclusion:

Green beans are a versatile and delicious vegetable that can be enjoyed in a variety of ways. They are a good source of vitamins, minerals, and fiber, and they can be cooked in a matter of minutes. Whether you are looking for a simple side dish or a more elaborate main course, green beans are a great option.
