Green Beans with Caramelized Onions and Almonds image

Tyler Florence's Green Beans with Caramelized Onions and Almonds recipe for Food Network is a holiday meal essential.

Provided by Tyler Florence

Categories     side-dish

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 8

Kosher salt
3 pounds green beans, trimmed of stem end
1/2 cup skin on sliced almonds
3 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
2 large onions, sliced thin
2 tablespoons chopped fresh thyme leaves
Freshly ground black pepper

Steps:

  • Fill a large high sided skillet with some water, adding enough to be just shy of the rim of the pan by about 1 inch. Place over high heat and bring up to boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp. Drain the beans and then run them under some cold water to stop them from cooking. Reserve the beans while you start the onions.
  • Return the skillet you cooked the beans in to the cook top over medium heat. Add the almonds and toast stirring every now and then until golden, about 3 to 5 minutes. Remove the almonds from the skillet and reserve. Return the skillet to the heat and add the butter and olive oil and heat until the butter has melted. Add the onions, season with salt and pepper, and cook stirring frequently until the onions caramelize, 20 to 25 minutes. Add the thyme, and cook for another 5 minutes. Add the cooked cooled green beans and almonds, and stir well to combine. Season with salt and pepper, to taste.

Cook beans 4 or 5 minutes until just tender yet still green. Drain beans and return pan to stovetop. Melt butter over moderate heat. Garlic-Roasted Green Beans With Shallots and Almonds image

Make and share this Garlic-Roasted Green Beans With Shallots and Almonds recipe from Food.com.

Provided by princessmommie

Categories     Vegetable

Time 30m

Yield 4 cuS, 4 serving(s)

Number Of Ingredients 9

1 lb fresh green beans (thin beans preferred, but any type will work)
6 shallots, peeled, and cut into thin slivers
5 large garlic cloves, peeled and cut into thin slices
2 tablespoons olive oil (original recipe called for 3, but I thought 2 was plenty)
1 teaspoon salt (or less)
fresh ground black pepper
1/4 cup flat leaf parsley, very finely chopped
1/4 cup almonds, chopped (I used sliced almonds and only slightly chopped them)
1 teaspoon lemon zest

Steps:

  • Preheat oven to 450°F (If you're cooking other things you can use a slightly lower temperature, just increase the time a little.).
  • Trim ends from green beans. If using thin, long beans, cut in half crosswise into pieces about 2 inches long. Peel and cut shallots and garlic, then place with beans in plastic bowl. Add olive oil, salt, and pepper, and use a wooden spoon to toss until beans, shallots, and garlic are well coated with oil.
  • Spray roasting pan with nonstick spray or mist with olive oil, then arrange the vegetables in a single layer. (I like to cover the pan with foil, then spray the foil for even easier clean-up.) Roast 12-15 minutes for thin beans, or slightly longer for regular beans, until beans are slightly shriveled, and shallots and garlic are lightly browned.
  • While beans cook, toss together chopped parsley, chopped almonds and lemon zest. When beans are done, toss hot beans with parsley/lemon/almond mixture and serve immediately.

FRENCH GREEN BEANS SAUTéED WITH MUSHROOMS AND ALMONDS

French Green Beans Sautéed With Mushrooms and Almonds image

I created this Asian-inspired dish last night. It is permissible for phase one of the South Beach Diet and we LOVED it. I used frozen french beans from Trader Joe's, but fresh beans would be wonderful! Amounts are highly approximated; I didn't measure when making this, but this is pretty similar to what I did. (If using fresh beans, you'd probably want to blanch them in boiling water and then plunge in ice water, and *then* add to the pan.)

Provided by spatchcock

Categories     Fruit

Time 35m

Yield 2 serving(s)

Number Of Ingredients 6

1 tablespoon olive oil
2 -3 garlic cloves
6 large button mushrooms, sliced
1/2-3/4 cup whole almond (more or less to taste and to fit your dieting goals)
1/2 lb frozen French-cut green beans (like those found at Trader Joe's but any would work, including fresh, also, you may want to add more)
soy sauce, to taste

Steps:

  • Heat oil over medium heat.
  • Sauté garlic until soft, being careful not to let it burn.
  • Add sliced mushrooms and sauté until they look fairly cooked and shiny (about 5 minutes).
  • Add almonds and sauté for a couple more minutes.
  • Finally, add frozen green beans and splash of soy sauce.
  • Stir frequently until beans are just cooked and, of course, no longer frozen.
  • If not on the south beach diet or watching sugar intake, you could add oyster sauce or other Asian condiment to the mixture.

GREEN BEANS WITH BLUE CHEESE AND TOASTED ALMONDS

Green Beans With Blue Cheese and Toasted Almonds image

This is a wonderful veggie side dish to serve to guests, it is more like a bean salad, as it is not meant to be served hot, but at room temperature. The amounts I have listed are only estimated as I really do not measure any thing when I make this dish, you can adjust all ingredients to taste. You can really use just about any kind of nuts for this recipe, I have even made this with toasted walnuts. The amounts in this recipe serve 4 but you can double or even triple the recipe to serve at a dinner party. This green bean dish is good enough to be served a fancy restaurant, it is that good!

CRISPY DUCK SALAD WITH GREEN BEANS AND HONEYED ALMONDS

Crispy Duck Salad With Green Beans and Honeyed Almonds image

Provided by Melissa Clark

Categories     weekday, salads and dressings

Time 1h15m

Yield 2 to 3 servings

Number Of Ingredients 15

1 tablespoon honey
Pinch salt
1 cup slivered almonds
2 tablespoons raw sugar
3/4 pound haricots verts or green beans, trimmed
2 duck breasts, trimmed (1 1/2 pounds total)
1 teaspoon kosher salt, more as needed
1 teaspoon chipotle or other chili powder
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 cup plus 1 teaspoon extra virgin olive oil
1 garlic clove, minced
2 tablespoons fresh lime juice
1 bunch watercress

Steps:

  • Heat oven to 350 degrees. In a small saucepan over medium heat, cook honey and salt until thin and runny, then mix in almonds until coated. Add sugar and toss to coat. Spread nuts on baking sheet (lined with parchment paper) and bake, stirring once, until deeply golden brown, 10 to 12 minutes. Let nuts cool, then break up clumps with your fingers.
  • In a medium pot on medium-high heat, bring six cups salted water to boil. Fill a medium bowl with ice water. Cook green beans until bright green and tender, 2 to 4 minutes depending on thickness of beans. Drain, then plunge into ice water to stop cooking. Drain and pat dry.
  • Raise oven heat to 400 degrees. Using a sharp knife, score duck fat into a crosshatch pattern, with cuts a half-inch apart. You want to cut through fat but not into flesh of duck.
  • In a small bowl, mix salt, chili, pepper, cumin and cinnamon. Rub mix all over duck, working it into the fat.
  • Set an ovenproof pan on the stove over medium-low heat. Add 1 teaspoon of oil, heat for a few seconds, then add duck, fat side down. Sear without moving until dark brown, about 10 minutes (if it starts to burn, lower the heat). Flip duck and cook for 1 minute, then transfer pan to oven and roast until meat is done to taste, 4 to 8 minutes longer for medium rare (130 degrees). Let duck rest on a cutting board. Reserve 2 tablespoons of fat from pan.
  • Using mortar and pestle or side of a heavy knife, make a paste from garlic and a pinch of salt. In a small bowl, mix it with lime juice and a half-teaspoon salt, then drizzle in remaining olive oil, whisking well.
  • In a large bowl, toss green beans and watercress with reserved pan drippings and just enough of dressing to coat. Taste and add salt if desired.
  • Slice duck breasts and toss with salad. Garnish with almonds and serve.

1/3 cup almonds, sliced

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green in color and have no blemishes or bruises. Avoid beans that are limp or have yellowed tips.
  • Trim the green beans: Snap off the ends of the green beans and remove any strings. If the beans are particularly long, you may also want to cut them in half.
  • Blanch the green beans: Blanching the green beans helps to preserve their color and nutrients. To blanch the beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately remove the beans from the boiling water and plunge them into a bowl of ice water to stop the cooking process.
  • Toast the almonds: Toasting the almonds brings out their flavor and makes them more crunchy. To toast the almonds, spread them in a single layer on a baking sheet and bake at 350 degrees Fahrenheit for 5-7 minutes, or until they are golden brown.
  • Use a flavorful vinaigrette: The vinaigrette is what really brings this dish together. Make sure to use a good quality olive oil and vinegar. You can also add other herbs and spices to the vinaigrette, such as garlic, Dijon mustard, or honey.

Conclusion:

This green beans and almonds recipe is a delicious and healthy side dish that is perfect for any occasion. The green beans are tender and flavorful, the almonds add a crunchy texture, and the vinaigrette brings it all together. This dish is also very easy to make, and it can be ready in under 30 minutes. So next time you're looking for a quick and easy side dish, give this green beans and almonds recipe a try.
