  • Leave the pointed tips on the green beans, but snap off the stem tips. Wash. Bring a large pot of water to a boil. Add the sugar and 1 tablespoon salt. 2 medium tomatoes, ripe (about one pound)
1 small shallot, minced
1 tablespoon lemon juice
2 tablespoons fresh parsley leaves, minced

2 ounces feta cheese, crumbled (1/2 cup)
2 tablespoons extra virgin olive oil
