1 tablespoon extra-virgin olive oil
2 teaspoons freshly squeezed lemon juice
1 teaspoon lightly packed lemon zest
1 teaspoon rinsed and finely chopped cured anchovies (about 2 fillets)
1 medium shallot, thinly sliced
1/2 cup thinly sliced cured pitted black olives
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Bring a medium pot of heavily salted water to a boil over high heat. Prepare a water bath by filling a bowl halfway with ice water.

1/2 medium cucumber, halved lengthwise and sliced
1/3 cup julienned sweet red pepper
1/4 cup thinly sliced onion
DRESSING:
2 tablespoons cream cheese, softened
1 tablespoon 2% milk
1 tablespoon tarragon vinegar
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a saucepan of boiling water, cook green beans, uncovered, until crisp-tender, 3-5 minutes. Remove beans with a slotted spoon; drop immediately into ice water.
