Green Bean Casserole Cups Recipe by Tasty image

A new twist on your favorite holiday side dish! Simply pick up some store-bought crescent roll dough, and these cups come together in a flash. Don't forget to top them with French-fried onions for that signature crunch!

Provided by Betsy Carter

Time 1h

Yield 12 servings

Number Of Ingredients 13

nonstick cooking spray, for greasing
1 teaspoon kosher salt, plus more for boiling
½ lb green beans, trimmed and halved crosswise
1 tablespoon unsalted butter
4 oz button mushroom, sliced
½ teaspoon ground black pepper
2 cloves garlic, minced
1 tablespoon all purpose flour, plus more for dusting
⅓ cup vegetable broth
½ cup heavy cream
1 cup shredded cheddar cheese
1 tube store-bought crescent roll dough
¾ cup french fried onion

Steps:

  • Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin with nonstick spray.
  • Bring a large pot of salted water to a boil. Prepare an ice bath in a large bowl and set nearby.
  • Add the green beans to the boiling water and cook for 4 minutes, until bright green and slightly tender. Drain the green beans, then transfer to the ice bath. Let cool, then drain and set aside.
  • Melt the butter in a large pan over medium heat. Add the mushrooms, season with the salt and pepper, and cook for 5 minutes, until lightly browned. Add the garlic and cook for another 2-3 minutes, until fragrant. Add the flour and stir until the mushrooms are coated and the flour begins to toast, about 2 minutes.
  • Add the vegetable broth and heavy cream and stir until fully combined. Bring to a boil, then reduce the heat to low and simmer for 10 minutes, or until thickened.
  • Add the blanched green beans and cheddar cheese and stir to combine. Remove the pan from the heat and let the green bean mixture cool slightly.
  • On a lightly floured surface, unroll the crescent roll dough and pinch the seams together with your fingers. Roll out with a rolling pin into an even layer. Cut into 12 equal squares. Add each square of dough to a cup of the prepared muffin tin.
  • Fill each crescent cup with 2 tablespoons of the green bean mixture and top with 1 tablespoon of French-fried onions.
  • Bake for 20 minutes, until golden brown. Remove from the oven and let cool slightly, then release the cups from the muffin tin.
  • Enjoy!

ABSOLUTELY DELICIOUS GREEN BEAN CASSEROLE FROM SCRATCH

Absolutely Delicious Green Bean Casserole from Scratch image

No cans here! Fresh mushrooms, onion, and herbs with frozen green beans, sour cream, and cheddar cheese make this a delightfully tasty twist on the traditional casserole. I developed this recipe, longing for a 'no cans' version of the classic dish. I made this one year for my husband's family at Christmas time, and now they ask for it every year! My husband asks me to make it for dinner throughout the year.

Time 35m

Yield 6

Number Of Ingredients 13

2 (12 ounce) packages frozen French cut green beans
8 ounces crimini mushrooms, quartered
3 tablespoons butter
1 small onion, halved and thinly sliced
1 tablespoon chopped fresh parsley
2 tablespoons all-purpose flour
½ teaspoon lemon zest
½ teaspoon salt
1 pinch ground black pepper
½ cup milk
1 cup sour cream
½ cup shredded Cheddar cheese
1 (2.8 ounce) can canned French fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place green beans into a saucepan and fill with about 1/2 inch of water. Bring to a boil and steam until beans are tender but still bright green, about 5 minutes. Drain and toss with the mushrooms. Set aside.

Gradually whisk in milk, stirring constantly, so that no lumps form and then stir in sour cream. Warm over medium heat until the sauce begins to bubble. Dump in the green beans and mushrooms, stirring to coat.

  • Bake in the preheated oven until the cheese melts, about 15 minutes.

Tips:

  • Use fresh green beans: Fresh green beans have a crisp texture and a bright, vibrant color. If you're using frozen green beans, be sure to thaw them completely before cooking.
  • Don't overcook the green beans: Green beans should be cooked until they are crisp-tender, not mushy. Overcooked green beans will lose their flavor and texture.
  • Use a good quality cream of mushroom soup: The cream of mushroom soup is a key ingredient in this casserole, so it's important to use a good quality soup. Look for a soup that is made with real mushrooms and cream, not just water and thickeners.
  • Add some extra flavor: You can add some extra flavor to this casserole by adding some chopped onion, celery, or garlic. You can also add a teaspoon of dried thyme or oregano.
  • Top with crispy onions: Crispy onions are the perfect topping for this casserole. They add a nice crunch and a lot of flavor.
