GREEN BEAN BURGER YUMMMM
I was very hungry for green bean casserole, but wanted a whole meal dish. Gave part to a friend's family, and even her picky eaters requested I make it for them again.

Steps:
- Preheat oven to 350 degrees. You will be using a 9X13 pan or equivalent casserole dish. Cook Hamburger meat and drain. Set aside. In 9X13 pan, spray with cooking spray to cook. Mix soup, broth, heavy cream, milk, sour cream, crm cheese, seasonings. (you may add pepper to taste, if desired). Mix thoroughly.
- Add warm cooked burger meat, frozen green beans and mix again. Add light coating of crumbled fried onions to top, evenly. Place in 350 degree, preheated oven for 25 minutes. Remove carefully from oven. Next, cruble/crush, the sleeve of crackers (you may use less) and cover top of casserole. Now add remaining coating of the french fried onions. Melt butter, pour evenly over top of the cracker/fried onion mixture. Bake another 15 minutes. Let cool 10 minutes or so before serving. You may make this version with other meats, or add yellow squash instead of meat for a vegetarian dish. THE SECRET is the nutmeg. It is the star ingredient.

- In a cast-iron skillet, cook the ground beef on medium heat until browned, about 5 minutes. Remove the ground beef and drain grease, leaving 1 Tbsp of the grease in the pan to saute the vegetables in.
- In the same skillet, cook the chopped onions over medium heat until they start to soften, about 3 minutes. Add the mushrooms to the pan and cook for 2 minutes more.
- Add in the green beans, garlic, and chicken broth, cook for 2-3 more minutes until the green beans and the other vegetables are softened.
- Turn the heat down to medium-low add the cream cheese and then sour cream.
- Add the beef back into the pan along with the salt, pepper, dried thyme, and Worcestershire sauce. Stir gently to combine.
- Sprinkle with the cheddar cheese over the top.
- Place the entire dish in the oven and broil for 2 minutes until the cheese is browned and melted. Or, add a lid to skillet and cook for 3-4 minutes until the cheese melts. Using the stovetop, your cheddar cheese won't be crispy, but it will melt.

I make this thick comforting soup often for my family during the cold winter months. It is so fast and easy to fix and it is rather low in fat and calories. This makes 4 very large servings. To reduce sodium, you may use low sodium green beans if you prefer. I adapted this recipe from "Fast, Cheap and Easy," by JoAnna Lund. Condensed cream of tomato soup and condensed regular tomato soup are interchangeable in this recipe; no alterations necessary.The important part is that it is indeed a condensed version of tomato soup, as opposed to ready to serve.
